New Study Sheds Light on Salmonella in Poultry: A Call for Targeted Regulation Raw poultry remains a leading cause of Salmonella poisoning, affecting thousands annually in the U.S. Researchers from the University of Illinois Urbana-Champaign reveal that a few products with high levels of virulent Salmonella strains are responsible for most illnesses. Despite the poultry industry's success in reducing overall Salmonella frequency, sickness rates haven't declined. The study supports USDA’s potential regulatory changes focusing on high-risk strains like Enteritidis, Infantis, and Typhimurium, which account for up to 83% of illnesses. Co-author Matt Stasiewicz emphasizes the need for regulation aligned with public health, urging the industry to adopt innovative risk management strategies. This approach could transform consumer safety, ensuring efforts target the strains most harmful to public health.
