While you're contemplating how to carve, decorate, or eat your pumpkin this year, here are a few fun facts about one of our Ground Ed students' favorite things to grow -- 🎃 --Pumpkins are considered a fruit....and a squash and a gourd --The tradition of carving Jack-O'-Lanterns was brought to America by Irish immigrants and started with the carving of a turnip to use as a lantern --The average pumpkin has 500 seeds (and pepitas are an excellent source of magnesium and iron!) 💪 --Pumpkin is the official state fruit of New Hampshire (but pumpkin pie is the official state pie of Illinois, the state that grows the most pumpkins) --In ancient China, pumpkins were used to ward off evil spirits and were considered a symbol of well-being 😊

What word best describes the students in the Ground Ed program? One word: Eager! And here's a great definition--"keen or ardent in desire or feeling; impatiently longing." Yes, it's one thing to plant seeds. Then another to wait for the growth, that very first sprout peeking through the soil. And yet another to long for the harvest! Sometimes there's impatience during the growing. But there's enthusiasm in the eagerness. Here's to being eager! Let's hope our students experience a lifelong sense of eagerness--to learn, to grow, to evolve.
