Our Amaro Rosina is an aperitivo-style Amaro distilled in-house from a base of 100% Washington-grown apples. Infused with fresh grapefruit peel, ginger, gentian root, bitter orange peel, bay leaf, and Cascade hops. Finished with pure cane sugar and naturally colored with cochineal. . The name Rosina comes from my Great Grandmother, Rosina Olivetto Mele, and is a nod to our Italian heritage. This spirit is crafted in honor of our Italian roots, taking cues from traditional Italian styles, while incorporating elements of the Pacific Northwest to make it distinctly our own. . A base spirit made from apples and the infusion of both traditional and PNW botanicals (see Cascade Hops!), highlight both familiar and local flavors all in one. We take a different approach from traditional red bitters, however, and bottle this spirit at a higher 70 proof and a lower sugar content. A great companion to classic cocktails like Negronis, Boulevardiers, and Spritzes, with a unique Pacific Northwest twist. Introducing our Washington Apple-based Gin. For all of our spirits, we manage all aspects of production in house. This gin starts with a fermentation of Washington apples using a yeast strain designed for tequila fermentations, lending a huge ester profile to the resulting hard cider. We take this hard cider and distill it 3 times in our hybrid pot-column still, with the last distillation using our gin basket to vapor infuse the essence of 10 different botanicals. Juniper, rose petal, bay leaf, cardamom, vanilla bean, cubeb berry and orange peel to name a few.  . We take the gin off the still at a lower proof than typical distilled gins to retain some of that apple character from fermentation. The apple distillate lends a beautiful silky mouthfeel and rich body, which complements the floral and savory qualities of the botanicals. Highside Distilling is a small, family owned and operated distillery in the heart of the Pacific Northwest, producing a line of Gin, Amari, and Single Malt whiskey using the finest ingredients. The three of us, Jeff (Dad), Helen (Mom), and Matt (son), all share a love of home brewing and a passion for the craft beverage industry, which evolved into opening our own dream distillery in 2018. We do everything on-site and by hand at our facility on Bainbridge Island, including mashing, fermentation, distillation, and aging of spirits. Our family has always had a strong belief in the positive impact of memories created over a shared meal or drink.
