She’s ready to show you not only the best appliances (Viking, La Cornue, AGA and more!), but how to make your meals both healthy and insanely delicious. Here is one of her tasty, easy-to-prepare dishes for your Labor Day get-together: a black bean mango salad that can be used as either a salad or a dip with tortilla chips. Mention this post when visiting the showroom and Chef Kristen will give you a signed copy of her outstanding cookbook. Chef Kristen’s kitchen “must haves”: Secret (but not) Ingredient: Chicken broth for ancient grains, couscous, or orzo and mixing it into a finished dish. Food: Eggs. They make a great dinner in a pinch. Homemade waffles with eggs, oats, applesauce, cinnamon, and almond milk and egg salad sandwiches are a big favorites. Kitchen tool: Ultimate favorite tool is a mango slicer. It looks like an apple corer but slices around the pit perfectly. Appliance: Viking 7 French Door oven all the way but my kids would say Brava because its fast and furious. Music: 90s music! Mariah Carey and Whitney Houston! For Culinary Inspiration: Dining out at the top restaurants in Chicago. My husband and I love a good prix fixe menu with wine pairings. Underappreciated Flavor: Pickles! This could be because I’m currently pregnant 😊 but I love pickles on homemade sourdough pizza, breading in panko and frying or using pickle juice to brine meats. Using juice and spices from the pickle jar is great to make ranch dressing, or for a swig on hot days to replenish electrolytes. We’re thrilled to announce recently-promoted leadership at two of our Italy-based Middleby Processing brands. Mr. Mario Ori has been named President of Vemac. He brings more than two decades of experience to his role, and is well-known and highly respected throughout the industry. Mario has proven his effective leadership in Europe and the U.S., and has expanded Middleby processing solutions in the North American market. We are all excited for the future of Vemac under his leadership. Mr. Michele Riva has been promoted to General Manager of Proxaut. He brings a deep expertise with a 15+ year career in the protein processing technology field. During the past few years, he has excelled in senior management roles both in Italy and the U.S. The knowledge Michele brings to the Middleby global team has benefited not only Proxaut, but our entire Food Processing Group.
