On Monday, we had the privilege of touring Windy City Harvest’s largest farm, Legends Farm! 🌱 This 2-acre site serves as an incubator for small farm businesses run by graduates of their incubator training program. Established in 2013, Legends Farm is located on land that was once part of the Robert Taylor housing complex and now supports incubator plots and well as Windy City Harvest's plots. Senior Manager of Farm Operations, Joe, guided us through the incubator training program, sharing how it helps individuals learn the ins and outs of farming. Graduates can continue their journey by running their own independent farm businesses on their plots. Thank you to everyone who joined us on this insightful tour! On Monday, we had the pleasure of visiting Tulip Tree Gardens, a beautiful regenerative farm founded by Rachel and Jesse Smedberg on the belief that nature nurtures us. 🌿 The farm is a haven for midwestern plants and animals, utilizing permaculture design to create a diverse and sustainable ecosystem. Throughout the tour, we learned about Tulip Tree’s commitment to regenerative practices, met some of the farm’s happy pigs 🐖 (fed with home-grown, fermented feed), and were joined by some of our favorite farm tour companions... Dragon 🐾 And Acre 🐾 ...plus lots of other friendly animals who call this place home! Tulip Tree isn’t just a farm—they collaborate with over 75 local farmers, making fresh, locally sourced food more accessible to the community. From high-quality meats and produce to stunning floral offerings, the farm embodies a dedication to nurturing the land and healing the earth for future generations. 🌻 We wrapped up the day with some delicious treats, including Tulip Tree’s very own honey! 🍯 Thank you to Rachel and Jesse for sharing your special farm with us, and to everyone who joined for the tour! On Monday, we toured Urban Eden at its new location inside The Plant, a historic building turned innovation hub for sustainable food production. Owner Terrence Glenn shared his expertise on hydroponic growing, from water flow regulation to temperature control and creative space use. We had a delightful treat tasting some zesty wasabi microgreens! Terrence also highlighted his commitment to sustainability, participating in The Plant’s circular economy by recycling burlap from a coffee company within the building. The Plant is dedicated to pioneering innovative methods for sustainable food production, energy conservation, and material reuse, creating a circular economy where waste from one process becomes inputs for another. Their approach aims to serve as a replicable model for successful circular economies.
