🍄🍄🟫 Today is National stuffed mushroom day! 🍄🟫🍄 Stuffed mushrooms can be made with all sorts of tasty fillings, like plant-based cheese, herbs, spinach and artichokes. Or try stuffing them with quinoa and chopped bell peppers, then drizzle them with olive oil and add salt and pepper to taste. Mushrooms are pretty special because they're packed with nutrients and can be a great addition to a healthy diet. They’re low in calories, fat-free, and a good source of fiber, protein, and antioxidants. It's a great way to enjoy some veggies in a super tasty way! #RootedSantaBarbara
