  • Congratulations to Holyrood Distillery, Lady of the Glen and Creetown Distillers on some well deserved ratings in the latest issue of Whisky Advocate ! "From UK independent bottler Lady of the Glen (part of Hannah Whisky Merchants) comes a vintage-dated 10 year old. Creamy vanilla, fresh oak, and subtle fig on the nose. Some heat on the palate, but with excellent flavors of blueberry, bitter chocolate, and unsweetened espresso. A long, rich finish offers leather, baked apples, raspberries, and chocolate. Great depth of flavor, and wellwoven integration." Holyrood: "Ambir includes a variety of specialty malts, including Highland peated, Vienna, chocolate, and Crystal 240. It is sweet and fruity, with excellent balance. On the nose, there’s pineapple, vanilla ice cream, and honeyed oats. The palate delivers cocoa powder, cantaloupe, and a whisper of spiced smoke. The finish is warming, with gentle smoke and waves of dried fruit." On Creetown's 28 Year old Speyside: "Caramelized sugar, grilled pineapple, and baked apples make for an enticing nose, pulling you back for more; if you stick with it awhile, you’ll be rewarded with earthier notes and minerality. Java on the palate; flavors of coffee ice cream and café con leche enhance a delightfully creamy texture. The finish sees more of that espresso influence, and it’s amplified by dark chocolate brownie batter and cardamom spice. No complaints here!" https://lnkd.in/eEbdm4fB

    Today I have the pleasure of exploring another great whisky from the Independent Bottler, 𝐃𝐫à𝐦 𝐌ò𝐫. Kenny and Viktorija McDonald are husband and wife team and run the business from Dumbarton, west of Glasgow in Scotland. Dràm Mòr was launched in 2020 and continues to release great quality whiskies and more! Dràm Mòr is now available in the U.S. through 𝐒𝐂𝐎𝐓𝐂𝐇 𝐃𝐑𝐈𝐍𝐊𝐄𝐑𝐒 𝐎𝐍𝐋𝐘. 𝐓𝐡𝐞 𝐖𝐡𝐢𝐬𝐤𝐲 𝐓𝐨𝐝𝐚𝐲: 𝐃𝐫à𝐦 𝐌ò𝐫 𝐋𝐢𝐧𝐤𝐰𝐨𝐨𝐝 𝟏𝟎 𝐘𝐞𝐚𝐫 - Single Malt Scotch Whisky Cask# 303762 𝐑𝐄𝐆𝐈𝐎𝐍: Speyside 𝐀𝐁𝐕: 56.8% 𝐀𝐆𝐄: 10 Years old 𝐂𝐀𝐒𝐊: Finished in a first fill Bourbon barrel 𝐂𝐎𝐋𝐎𝐑: Butterscotch Gold 𝐍𝐎𝐒𝐄: There’s a nice rich sweetness about this whisky. Lots of honey, vanilla and butter toffee up front. Also, you get the nice aromas of oak wood and cinnamon and similar spices. 𝐏𝐀𝐋𝐀𝐓𝐄: The first thing I noticed about this whisky was its mouth watering, juicy affect that it has. Very similar to the nose, the sweet vanilla and buttery toffee flavors are first to present themselves. Shortly after, a nice combination of uncooked Granny Smith and Honey Crisp apples come through. Then comes the cinnamon and baking spices and a very slight tartness and drying affect you might get from the oak wood. 𝐓𝐇𝐎𝐔𝐆𝐇𝐓𝐒: This is a really nice whisky. At 56.8% ABV it has a great mouth feel and thicker viscosity to it. This is a whisky that falls into the categories of juicy and chewy. This would be a great whisky to pair with many meals, but also don’t forget desserts and cookies too! With the higher ABV it stands up well and pairs with rich foods.     Today I have the pleasure of trying a Single Malt Scotch Whisky from the 𝐇𝐨𝐥𝐲𝐫𝐨𝐨𝐝 𝐃𝐢𝐬𝐭𝐢𝐥𝐥𝐞𝐫𝐲 located in the Southside district of Edinburgh, Scotland. Opened in 2019, Holyrood Distillery was founded by Canadian couple, Rob and Kelly Carpenter and Scot, David Robertson. Rob and Kelly are also the cofounders of the Scotch Malt Whisky Society branch in Canada. David brings his collective experience from working with Diageo, The Macallan and Rare Whisky 101. The Holyrood Distillery building was once a former railway goods shed from the 1830’s. The Holyrood Distillery is focusing on reviving Edinburgh’s distilling heritage and putting Edinburgh back on the map for Scotch whisky production. Holyrood is using heritage and specialty malts, a wide variety of different yeasts along with different fermentation times to create different whiskies. All these variables are ways to change the character of the spirit. This whisky was created using a total of 7 different types of malt, 4 of which are specialty malts including Chocolate Malt, Vienna Malt, Crystal 240 and Caramalt. Also 10 different types of yeast ranging in different percentages. 𝐓𝐡𝐞 𝐖𝐡𝐢𝐬𝐤𝐲 𝐓𝐨𝐝𝐚𝐲: 𝐅𝐫𝐨𝐦 𝐓𝐡𝐞 𝐇𝐨𝐥𝐲𝐫𝐨𝐨𝐝 𝐃𝐢𝐬𝐭𝐢𝐥𝐥𝐞𝐫𝐲 𝐀𝐌𝐁𝐈𝐑 - Single Malt Scotch Whisky 𝐑𝐄𝐆𝐈𝐎𝐍: Lowlands 𝐀𝐁𝐕: 49.8% 𝐀𝐆𝐄: No Age Statement (NAS) 𝐂𝐀𝐒𝐊: First fill Bourbon barrels and Oloroso Sherry casks 𝐂𝐎𝐋𝐎𝐑: Brassy Gold 𝐍𝐎𝐒𝐄: The very first smells coming out of the glass were light fruits, Sprite soda and even a little lemon zest. Shortly after that came more aromas of vanilla fudge and smells that remind me of fruit cocktail in the syrupy liquid. 𝐏𝐀𝐋𝐀𝐓𝐄: On the palate a nice sweetness now leaning slightly more towards darker jammy fruits. Also a combination of vanilla fudge, honey and even a few white grape notes. 𝐓𝐇𝐎𝐔𝐆𝐇𝐓𝐒: No doubt, a lot of thought was put into this whisky. From the photo you can see the nice beading bubbles present when pouring this whisky. I feel this is a whisky that once opened will continue to evolve with even more sweetness and additional rich flavors and continue to develop. There was a slight astringency up front in the beginning. A little bit of water smoothed that right out and brought out more nice sweetness.
