AOC Martinique is dedicated to the production of Rhum Agricole on the island of La Martinique. . Rhum Agricole must be made from sugar cane juice and the sugar cane for this AOC must be grown on the island. . The harvest must take place between January 1st and August 31st and the fermentation is limited to 5 days. The final abv. of this ferment, should not exceed 7,5% abv. . Martinique AOC must be distilled in column still which must have a minimum of 20 plates and are heated either by steam injection of reboiler. The column can be made from copper of a mix of copper and stainless steel. . The newly made spirit must be at least 65% abv and mo more than 75% abv. . Rhum Blanc has no colour and has been rested for at least 6 weeks after distillation . Rhum Vieux has been aged for a minimum of 3 years in oak barrels of maximum 650L . California has a new AVA ! (it will be fully implemented on November 15th) . Crystal Springs of Napa Valley AVA . This new AVA is located on the western side of the Vaca Range and is neighbouring the Howell Mountain AVA and Calistoga AVA in the north and St.Helena AVA in the South. Elevation ranges from approximately 120m to 420 metres and slop angle from 15% to 40%. . The AVA benefits from abundant sunshine and a low frost risk compared to other AVAs in the area. . This part of the Vaca Range consists mainly of volcanic bedrock. Topsoil is varied but largely made up of igneous rock but also includes compacted volcanic ash and other weathered metamorphic and sedimentary soils. . The Crystal Springs of Napa Valley AVA covers a total of approximately 1620 hectares (4,000 total acres) with only about 95 hectares (230 acres) currently planted to vineyards. . The Macedon Ranges is Australia's coolest mainland wine region. Although the very first vines were planted in the region in the 1860’s, the modern Macedon Ranges wine industry really got going in the 1970’s. . With vineyards at altitudes ranging from 300-800 metres, it is categorised as a cool to cold climate. . The region is best known for its Pinot Noir, Chardonnay and Sparkling Wines but also for its aromatic whites, like Riesling and Gewürztraminer. . In the northern part of the region, big, robust reds including Shiraz and Cabernet are also to be found. . The majority of our soils are sandstone and shales but granitic hills volcanic soils can also be found in the region. . Sunbury GI, near Melbourne, is one of Victoria's oldest wine regions, having produced wine since the 1860s however, its GI was only recognised in 1998. . Geelong is classified as a ‘cool climate’ wine region. Yet, Geelong is the driest GI in the Port Phillip zone and today has approximately 500 ha under vine. . The majority of the Geelong wine region is strongly influenced by the moderating effect of the surrounding water of Port Philip Bay. In the northern part of the region the climate is less maritime and more continental. Elevations are from the coast to approximately 400m above sea level. The region is fairly dry, with average rainfall between 500 ml and 600 ml per annum. . Strong winds are a constant, providing good air flow within the canopy, assisting in the natural control of various vine diseases. Spring frosts and wind damage can also be very challenging. . Gellong GI wines tend to have a rich concentration of flavour, aromatics and colour. The GI has 3 unofficial sub-regions : Surf Coast/Otways, Bellarine and Moorabool Valley. . The Bellarine and Surf Coast area have a maritime microclimate while the Moorabool Valley is known for its dark volcanic topsoil. The Mornington Peninsula GI is located about one hour from Melbourne and covers about 900 ha of vines. . With a significant maritime influence, the Mornington Peninsula GI is cooler than most other parts of Australia, but micro climates play a huge role within the region - the same grape variety might be harvested up to three week apart depending of the area where it is grown. . There’s often wind and rain during the grape-growing summer months of November and December, which create perfect conditions for the region’s signature varieties Chardonnay and Pinot Noir. .
