Did you know that 70% of foods regulated by the FDA are fresh produce, and an alarming 90% of foodborne illnesses in the U.S. are linked to these items? In fact: 80% of E. coli illnesses, 60% of Salmonella cases, & 50% of Listeria cases are caused by fresh produce. This data underscores the urgent need for enhanced food safety measures in the produce sector to safeguard public health. Fresh produce plays a vital role in a healthy diet. However, reports to the CDC show a rise in foodborne outbreaks linked to uncooked fruits, vegetables, and juices. As the number of produce-associated outbreaks continues to increase, more research is required to understand the mechanisms of contamination from farm to table. In May 2009, Margo Moskowitz’s life took a terrifying turn after eating a small bite of pre-packaged cookie dough. That bite led to weeks in the hospital, intense pain, and a diagnosis of E. coli O157. She spent years battling the aftereffects of this foodborne illness, which impacted her health, education, and everyday life. Today, Margo advocates for safer food systems as a representative of Stop Foodborne Illness. Every year, 1 in 6 Americans gets sick from contaminated food, and 3,000 lives are lost.
