Greek-style yogurts typically have protein content two to three times higher than conventional yogurt and are characterized by a thicker texture and a smooth mouthfeel. One method for producing Greek-style yogurt is to add milk protein concentrate (MPC) to fluid milk prior to fermentation, to achieve a targeted composition of 8-10%protein. This method does not require special equipment, and it has the advantage of avoiding the generation of an acid whey coproduct stream. Adding whey protein concentrate (WPC) in addition to the MPC will create a smoother appearance and result in less syneresis during storage. The two key factors to be considered when selecting a dairy protein are the source of dairy protein (casein, whey or a combination) and the desired functional characteristics that the protein has the potential to contribute to the finished food or beverage. The source of protein may be dairy protein concentrates (defined as having 34–89% protein), isolates (containing 90–92% protein) or peptides, which provide distinct nutritional and functional advantages. Casein contributes fat emulsification, foaming and water binding and has good heat stability above pH 6.0.
