Luca Biffi, Technical Director of the Tamborini Carlo SA winery, is interviewed and explains how he uses our decision-support tool Polyscan. Since 2020, Polyscan has been employed to optimize the vinification of red wines as well as Blanc de Noirs wines. 🍇 In this interview, Luca Biffi details how Polyscan allows him to monitor polyphenol extractions during the vinification of Merlot and assists him in his technical decisions, a major asset for enological precision (around minute 28’).
