    We are thrilled to announce Joseph Elliott has joined the team in Wilson as Executive Chef.  As Executive Chef for Wilson, Chef Elliott brings with him over 20 years of experience and a rich culinary knowledge inspired by a regional seed-to-table philosophy. Chef Joe also served in the US Army based in Finleyville, Pennsylvania. Chef Joe joins Wilson after displaying his legendary work ethic at historic properties including, Sea Island Company, Barnsley Resort, Oglebay and most recently the historic William Penn in Pittsburgh, an Omni Hotels & Resorts property. "From a very young age, I was intrigued by food having spent much of my young life in Mount Airy, North Carolina. I knew I always wanted to find my forever job, and today I achieved that by joining the team in Wilson, Arkansas.  My mom had me spend a lot of time in the Carolinas. We would eat poke salad, and each year after winter ended, the upland cress greens that my Grandaddy and I would pick, chicken & dumplings were a staple along with hot water corn bread & buttermilk and on holidays a sip or two of corn whiskey. My style of cooking is truly seasonal, regional & fresh with sustainability & heritage breeds in mind as I was raised by a southern mother. Food was a way to show love.  From the smells of meat sauce frying in my great grandma’s cast iron skillet. To the loud whistle of the pressure cooker filled with green beans & side meat. These were the sounds and tastes that have given my inspiration and passion to pass on my family traditions to each guest I have had the pleasure to cook. I am humbled, honored and excited to take the reins in Wilson." He studied Culinary Arts, graduating Cum Laude, at the Pennsylvania Institute of Culinary Arts and began his career in 1997 at Nemacolin in Farmington, Pennsylvania. He went on to hold positions at the Cloister at Sea Island in Georgia, The Founders Inn and Spa in Virginia, and The Lodge of Four Seasons in Missouri. Chef Elliott was instrumental in the revamping of The Renaissance Pittsburgh Hotel’s restaurant and bar, and was a chef for the prestigious G20 summit, cooking for delegates from France, Germany and Turkey.

    Our most cherished day each month is celebrating the team that is sculpting hospitality at the highest levels! We celebrated under the pecan tree, and it was simply gorgeous.     We love Filson in Wilson. Not because it rhymes, but because they have been around almost as long as we have. Filson started as a dry goods store. They outfitted the 1897 Alaskan Gold Rush with clothing and gear. Years ago, a similar store was housed in a historic building in the town square of Wilson which was becoming the agricultural empire of the world. Recently, that 100-year-old building was restored and renovated to create the luxury hotel, The Louis. In Washington, Filson renovated the historic Star Manufacturing building to become their world headquarters and two years later, their flagship retail store. If your father is mining for gold or if he just refuses to stay indoors, why not stop at White's Mercantile this Father's Day and grab Dad a gift from Filson. Because just like Wilson, it's built to last.
