Vintage 2019 The Yatir Forest 2019 is produced from Cabernet Sauvignon (52%), Petite Verdot (32%), Malbec (9%) Cabernet Franc (7%). The composition of varieties varies from year to year depending on the nature of the harvest, to emphasize the "Yatir” character, the specialness of the area, and its vineyards. Vineyards: Various plots in Yatir Forest that yielded the highest quality grapes in the given year. The wine aged for 15 months in French oak barrels of which one third were new remained in the winery for a further year to age in its bottle. #redwine #yatirforest #2019

Twelve Important “New” Canadian Wineries 2023 By David Lawrason Dobbin Estate, Twenty Mile Bench, Ont. This super-premium Niagara winery has an impressive tasting room in a tower that models its lofty aspirations. The Dobbin family purchased the unique vineyard in 2018. With south- and north-facing slopes sloping into a very large pond, the site was geologically varied enough to ping the radar of Niagara consultants Peter Gamble and Ann Sperling. They started with a replanting to Niagara’s core varieties like riesling, chardonnay, pinot noir and cabernet franc. But it is not as simple as replanting. They are deep into rootstocks, clones and other viticultural minutiae that build options that can respond to Niagara’s becoming infamous vintage variation and create complexity and texture. And likewise, that is what these wines are all about. Whether masterful riesling, luxe chardonnay, energized pinot noir or the delicious soon-to-be-replaced cabernet blend, the wines are all subtlety, depth, textural grace, richness and elegance. With my scores in the mid-90s for complexity and finesse, registering their success. We’re not going to South Korea empty-handed! 😉 As you may recall, Babette will be heading to South Korea this October (yes, the entire month!) to showcase the finest selections from our producers. Naturally, Tabunello will be among the carefully chosen items. Here’s a recap of what you need to know about this exceptional red: 🍷 Tabunello is a varietal wine made from the benchmark grape variety of the winery. The 2HA winery, known for introducing Sangiovese to Hungary, carefully cultivates the vines with restricted yields. Grapes are hand-harvested into 12 kg boxes and meticulously selected both in the vineyard and prior to destemming. The vinification process features spontaneous fermentation in open wooden vats at controlled temperatures. The wine is aged in 225-liter barriques for 12 months, then bottled without clarification or filtration. It undergoes a minimum of 12 months of bottle aging before being released to the market.
