In our Singapore Club... 11 sommeliers from Taiwan, Mainland China, Vietnam, Singapore, South Korea, and Malaysia came together to represent their countries at Asia’s Best Sommelier in French Wines 2024. Through intense rounds of tasting, pairing, and presentation, they showcased their mastery and passion for French wines. Judged by an esteemed panel of international wine experts, including leading sommeliers, educators, and industry professionals, the competition celebrated the art of French wine appreciation. We are thrilled to announce that the title was awarded to Assistant Head Sommelier Yong Yi Ying, whose exceptional skill and dedication to French wines impressed the judges and earned her this prestigious honour. Reflections on My First Wine Tasting in Bilbao: Lessons Learned Organizing my first wine tasting in Bilbao was exciting but came with its share of challenges: 1. Finding Guests: It was tough to get people to come because I'm new here and not many speak Russian. Note to self: Use local networks and social media, team up with local businesses and expand to English speakers (My Spanish is still not perfect enough for me to host tastings in this language but I’m working on it) 2. Finding Wines: I had to scramble to find wines because the tasting was quite spontaneous. Tip? Plan in advance, order online and build relationships with local wine sellers. 3. Rare Wines: Getting rare rose txakoli was super hard even in Bilbao because it's made in small amounts and was off-season. Next time, I'll prepare better and plan ahead. 4. Money Matters: I didn't make much profit this time. Lesson? Double-check costs and pricing for future events. 5. Timing Troubles: I didn't realize it was a holiday weekend, so fewer people came. Remember to check local holidays next time. I’m still adjusting to local festivities and traditions. All in all, I think doing at least something is better than not doing it at all. We all should start somewhere. #3 Nadya's adulting story Since 2022, my life partner Valentin SPOUTIL 李萬龍, and his business partner Simon Habran have been importing Belgian Beer in Taiwan, Brewery Bertinchamps. Getting to witness all of this up close — discussing small or big matters with Valentin (though what about an opinion from a 25 years old right..... 😅), delivering beers from bar to bar, and labeling countless bottles of beer. Now, most of our weekend drinking involves introducing Bertinchamps. (I have never worked in sales before, a significant percentage of the restaurants we approach convert to sales has given me a taste of the exhilarating rush of selling). I wasn't initially a fan of beer, but this whole journey has raised me to become someone that would enjoy a bottle of Legére 12pm on a Sunday, and a Triple on a cold Saturday night. (I'm not sure it's a good thing but well, anything with moderation, let's say?) It was fun and enriching, like enrolling in a business course for free. (Or for my labor in exchange? 🤔) Over the past two years, this Taipei Wine Show is a good indicator on how much they have grown. 2022, they started with a free booth supported by a partner, in exchange, all sales revenue went to the partner. 2023, they shared a small-size booth with the same partner. 2024, they are now confident to take a full booth themselves. Also in 2024, they expanded, bringing more brands of Belgium beer, not only Bertinchamps, like from Omer Vander Ghinste, etc, hence the name beer-square.tw. With this significant exponential growth, they want to continue bringing more selection of good beers in Taiwan. And each time I joined them for this kind of exhibition, it has been incredibly enjoyable. Getting to meet fellow people in the F&B industry and beer enthusiast. It's never just about selling beers, but all the chats and knowledge exchanging. Sometimes when my social battery ran out, I'll be hiding at the back labelling their cups or something, observing the bustling crowd, enjoying the ambience. So if this post reaches those in need of enriching their beer selection in the menu, or those like us who enjoy a good beer after their 9-5, please stop by this weekend. There are 3 things every effective sommelier does. That ineffective sommeliers don’t do. Want to know them? Here they are… Effective sommeliers: make it their mission to suggest the right bottle for their guests. Ineffective sommeliers: push the bottles they want to move. Effective sommeliers: use everyday language when describing a wine. Ineffective sommeliers: lean heavily on insider jargon. Effective sommeliers: know their job is mainly about looking after people. Ineffective sommeliers: think they’ve been hired to talk about wine. Sommelier effectiveness can make or break a wine program. It’s almost always a question of attitude.

What is the BEST wine on the wine list As a dedicated Sommelier, one of the most common questions I encounter is, "What's the best wine on your wine list?" Rather than providing a straightforward answer, I believe in engaging with guests to understand their preferences better. This approach not only helps me tailor recommendations but also allows me to educate them on the intricate world of wine tasting. Drawing from my training at Wine & Spirit Education Trust and following the Systematic Approach to Tasting, I guide guests through a structured evaluation process: 1- Appearance: Observing the wine's color and clarity. 2- Nose (Aromas): Identifying the diverse aromas. 3- Palate: Exploring flavors, acidity, tannins, alcohol content, and body. 4- Judging the wine: Assessing factors like balance, length, intensity, and complexity on a scale from poor to outstanding. While academic terminology is crucial in describing wines, I also encourage adding a personal touch by relating to specific sensations and preferences. Phrases like 'velvety tannins,' 'bright acidity,' or 'full-bodied' paint a vibrant picture of each wine. Remember, effectively describing wine extends beyond vocabulary; it requires a genuine passion for wine and the willingness to share knowledge with others. Let your enthusiasm shine through as you experience the nuances of each bottle. It's great to see indigenous brands kicking goals in the food and beverage industry! Australia's first indigenous owned wine brand, Mt Yengo Wines, has seen tenfold growth over the last few months. They are now available at Vintage Cellars and First Choice Liquor as well as Carnival Cruises. They also export to the US and China will plans for the UK and Europe in 2025. A share of the sales goes to the artist whose art is featured on the bottle and to the National Indigenous Culinary Institute (NICI). The NICI provides training and experience to aspiring Indigenous chefs at restaurants like Rockpool, MoVida, Icebergs and Aria. There are also some new players like Munda Wines that have hit the market more recently.
