The biodynamic Château Edmus from the AOP Saint-Émilion Grand Cru is launching an alcohol-free wine. The rise of No-Low alcohol wines is indeed gaining strength. Currently, the Bordeaux region is introducing some products to the market. Discussions surround the innovations, and that is a focal point for the sector development. According to La Revue du vin de France, the Bordeaux Families cooperative is reported to have invested €2.5m in vacuum distillation facilities for producing (partially) de-alcoholized wines, aiming to market 500,000 bottles in this category by 2024.

Today is National Prosecco 🍾 Day The Glera grape which is used to produce Prosecco, is believed to be of Slovenian origin and was probably cultivated in the vineyards of the Italian village of “Prosecco” in Trieste which shares a border with Slovenia. It is thought to have been referred to by the Romans of the area, as far back as 200 BC, as Puccino. The first documented mention of Prosecco comes in a poem written in 1754 by Aureliano. In 1772 Francesco Maria Malvolti first linked the Conegliano Valdobbiadene region and Prosecco, but it wasn’t until the 1930s that the boundaries of the production area for Prosecco were officially outlined. The first known spelling of prosecco was in fact ‘‘Prosecho’’, mentioned by a Englishman named Fynes Moryson who visited the north of Italy. Moryson noted ‘‘Prosecho’’ as among the famous wines in Italy in 1593. Production techniques were altered and improved, and a higher quality wine was produced. RUBY™ - Exploring a new sensory frontier - The first wine yeast specifically selected for thiol expression in red wines The role of volatile thiols in red wines has been underestimated and we now know that they can make a significant contribution to the intensity and diversity of the sensory profile. Rigou et al. (2014) showed the correlation between thiols concentration and the specific sensory impact in red wine: 4MMP was linked to blackcurrant aroma while 3MHA and 3MH acted as enhancers of this perception. The presence of 3MH and 3MHA was associated with more intense red fruit aromas (Sibert et al., 2019). More recently, research by Panzeri et al. (2020) showed that 4MMP is linked to black fruits (including blackcurrant) and red berry fruits (such as raspberry); 3MH and more particularly 3MHA enhanced this aromatic perception, also adding plum and berry jam aromas.
