Fried Cornbread – Southern Cornmeal Hoecakes Ingredients 2/3 cup cornmeal 1/3 cup self rising flour 1/3 cup low fat buttermilk 1 large egg oil for frying (I used about 3 tbsps coconut oil, but you can use whatever you like) Instructions Combine first 4 ingredients together in a bowl, mixing well. Mixture should be very moist but not soupy. Heat oil in skillet and drop by spoonfuls into oil. Cook til brown on one side and flip (it cooks kind of like a pancake) to brown on the other side. Place on plate with paper towels and blot any excess oil.

In beer production, pasteurizing bottles and cans is an important process to help extend the shelf life of beer and prevent spoilage. Bottled or canned beer is pasteurized by passing it through a spraying chamber called a "tunnel". In the tunnel, the containers are sprayed with hot water to heat them for a fixed amount of time before cooling. If the spray clogs, unwanted bacteria and microorganisms can be left behind, which can compromise the quality and safety of the beer. 𝗡𝗮𝘁𝗶𝗼𝗻𝗮𝗹 𝗦𝗼𝘂𝗿𝗱𝗼𝘂𝗴𝗵 𝗕𝗿𝗲𝗮𝗱 𝗗𝗮𝘆 𝗦𝗶𝗺𝗽𝗹𝘆 𝘀𝗼𝘂𝗿𝗱𝗼𝘂𝗴𝗵 In the latest edition of 𝗕𝗮𝗸𝗶𝗻𝗴 𝗮𝗻𝗱 𝗕𝗶𝘀𝗰𝘂𝗶𝘁 𝗜𝗻𝘁𝗲𝗿𝗻𝗮𝘁𝗶𝗼𝗻𝗮𝗹, we are highlighting sourdough. Its value certainly lies in its diversity as no two sourdoughs are the same. Perfecting different sourdough specialties relies on process accuracy and stability, with optimum kneading and mixing parameters for each type of product. DIOSNA reports that working with user-friendly starter cultures goes a long way to maintaining their stability. DIOSNA’s starter cultures, for instance, can be used as semi-solid starters, which are easy to crumble, or as liquid starters. Both can be used for artisan production as well as for industrial solutions. Our article goes on to highlight general trends in Europe and to classify rye sourdoughs and wheat pre-doughs. Kneading options are also considered with DIOSNA pointing out that sourdoughs are not partial to a specific kneading technology. They can be processed with optimum results on universal kneaders, i.e., Wendel kneaders from DIOSNA ’s portfolio, as well as spiral kneaders. The choice between available options is determined by the recipe. Mixing times are also discussed and how to achieve the optimal fermentation process.
