I have noticed that the American restaurant industry is facing significant challenges. The current pandemic, combined with the consistently increasing labor costs, has resulted in a difficult situation for restaurant owners. They are struggling to find employees who can work for lower wages due to the decrease in sales. Consequently, many restaurants are left with only minimum wage workers who may not speak English fluently and may not be very friendly. These workers often move slowly and make mistakes while taking orders, which leads to an unsatisfactory experience for the customers, regardless of the quality of the food. This raises the question of why customers should be expected to tip when they receive poor service, which only leads to decreased sales for the restaurant. Lessons from the Pit Crew: How Jeff Gordon’s Team Transformed My Bussers I’ve never been much of a motor car fan, but one day in the early 2000s, I overheard two customers at the bar passionately discussing something that stopped me in my tracks: “The pit crew won the race for Jeff Gordon.” They were talking about the Pepsi 400, where Jeff Gordon’s legendary 11.8-second pit stop outpaced the NASCAR average of 13 to 16 seconds. That flash of precision and teamwork didn’t just keep him in the race—it put him in the winner’s circle. As the buzz about his crew’s performance grew, I found myself looking across the dining room at my support staff. And in that moment, I had a profound realization: I had drastically underinvested in my bus team. Bussers Are the Pit Crew of the Restaurant: a) You can’t seat guests at dirty tables. b) You can’t deliver seamless service without a clean, reset stage. c) And you can’t succeed when the people responsible for this are undertrained, undervalued, and overlooked. The truth? I had no clear metrics or goals in place to take them—or our operation—to an elite level. And it showed. Changing the Game. Inspired by that moment, we decided to rethink everything about how we approached our bus team: i) Named a Captain: We tapped our most energetic, detail-oriented busser to lead the team and work directly with our AGM. ii) Invested in Induction Programs: We revamped training to ensure every busser understood the importance of their role and had the tools to succeed. iii) Added Daily KPIs: We tracked table-turn times and reset quality, giving them measurable goals to strive for. iv) Celebrated Wins: We recognized their efforts during and after shifts, creating a culture of appreciation and pride. No longer unsung heroes, our bussers became the backbone of the restaurant floor. The Results? Transformational. Within months, we: :: Halved table-turn times, dramatically improving guest flow and satisfaction. Boosted staff culture, with bussers feeling empowered and engaged. :: Unlocked an Unintended Bonus: The servers, impressed by their impact, voted to increase the bussers’ tip share. :: Our Bus Program became the perfect training ground for future servers—teaching efficiency, precision, and attention to detail. Takeaway: If you want extraordinary results, invest in the areas others overlook. Bussers are the start and end of the Guest Experience Chain, and I’ve never seen a business lose when they make this team a priority.
