Last week I posted about Food Inc. 2 and ultra processed foods? The conversation can go in so many different directions and one is obviously knowing what is in your food and reading labels.
Another conversation can be around cooking education. When I saw the movie screening it included a panel of experts and a great discussion unfolded after the film. Among all of the topics, this one hit home....The importance of knife skills to make cooking easier (and also safer). Take a listen to this short clip from Ayr Muir, the founder of Clover Food Lab. Creating delicious, nutritious and varied texture modified food (TMF) from scratch requires more effort than just blending and serving.
For those on a texture-modified diet (TMD) the right texture, consistency and fortification is incredibly important - and producing it to this high standard in-house can be surprisingly time-consuming and difficult.
Producing in house texture modified food requires extensive labour, equipment, space and capability - and it can take up to 23 steps just to produce one variety of food for an aged care facility.
