Pressurizing Beverage Cans with CO2 - The Key to Maintaining Quality and CarbonationHave you ever wondered how beverage cans maintain their shape and carbonation, even when empty? The secret lies in pressurization using CO2. By carefully controlling the process, it's possible to pressurize cans while avoiding over-carbonation.The key steps are:Partially carbonate the liquid to the desired level, typically around 2 volumes of CO2. This can be done by force carbonating in a sealed container at a specific pressure and temperature. Open the CO2 cylinder and set the pressure to around 25 psi. Pour a sample and adjust as needed. The goal is to use just enough CO2 pressure to push the liquid out without adding more dissolved CO2. The partially carbonated liquid will not become over-carbonated due to the pressurization. Benefits of this technique include:The can maintains its shape and won't get crushed, even when empty The drink stays at the desired carbonation level, neither over-carbonated nor flat Pressurization helps maintain the drink's quality and shelf life by preventing oxidation and spoilage While nitrogen is ideal for a smooth, creamy texture, CO2 is easier to use and more readily available.
