We only need small amounts for each recipe, so it works great for low-carb and keto breads and bakes. Chermoula is a nutty, herbaceous, citrus flavored spread – perfect for Chilean Salmon. For this recipe, we replaced raisins with dried cranberries. The recipe is simple: 1 cup of toasted almond slivers, 1 cup of dried cranberries, ½ cup minced shallots, 2 bunches of fresh cilantro, 1 bunch of fresh mint, three garlic cloves, juice from 2 limes, 3/4 cup of olive oil, ½ teaspoon of saffron soaked in 1 tablespoon of hot water. Place ½ the nuts in a bowl. Add cranberries and shallots to bowl with nuts. Place the other ½ cup of nuts into a food processor and add the remaining ingredients. Spin in the food processor until combined but still slightly chunky. Combine the pureed herb mixture with the nuts, cranberries, and shallots to finish the chermoula. Taste – adjust with salt, pepper, and more lime juice if necessary. Top salmon fillet with chermoula. Bake on oven- safe dish for 6-8 minutes until firm and lightly caramelized on top. Here are the fermented carrots that I made with a simple recipe. It's 1 cup of water, 1 cup of any type of vinegar- red wine vinegar, apple cider vinegar, rice vinegar or white vinegar, and 1 tablespoon of sugar- any type of sugar- sugar in the raw, brown sugar, or white sugar and 1 tablespoon of kosher salt. Put that in a little pot, bring it to boil and stir until the salt and sugar are dissolved. Then take it off the burner and let it cool. Then you can use it to ferment whatever you want, carrots with ginger or without ginger. I'll use it on watermelon radishes, regular radishes ,mushrooms, cucumbers as just some examples. And all of them are delicious and they are great for your gut health!
