We are very proud to announce that our very own Silverhand Estate, the UK’s largest single organic vineyard, has achieved a historic milestone: becoming the first carbon-negative vineyard in the UK, without relying on carbon offsetting. We worked closely with the Farm Carbon Toolkit to measure and report on our carbon-negative status. A Smithsonian’s report highlights how climate change, corporate influence, and soaring demand put Mexico’s mezcal industry at a crossroads. As mezcal producers strive to meet global demand, they must also navigate environmental challenges to protect this beverage’s future. Santa Catarina Minas, a village 25 miles south of Oaxaca City, is known as the “cradle of mezcal,” the region is home to some of the most revered agave distillates in Mexico, with a long history of mezcal production deeply rooted in tradition. At Real Minero, one of the village’s most renowned distilleries, the diversity of agave species growing in their garden reflects the complexity and richness of mezcal. These plants—ranging from the slender cruise to the stout tobalá—imbue mezcal with their distinct flavors, influenced by the dry mountain climate of the region. Matías Domínguez Laso, a consulting biologist at Real Minero, describes their efforts to recreate the agave’s natural environment. “We brought the mountain here to recreate the environment where these agaves grow in the wild,” he told The Smithsonian during a property tour. As mezcal gains global recognition, production has skyrocketed by 700% over the last decade. However, this explosive growth is not without its problems. Climate change, corporate pressures, and environmental degradation threaten the existence of mezcal as we know it. At the heart of this issue lies the question: Can mezcal distillers balance sustainability with increasing global demand? The process of making mezcal has changed little over the centuries. Agave plants are harvested, slow-roasted in underground pits, crushed by stone wheels, and fermented in large wooden barrels before being distilled into the final spirit. This ancient tradition has been passed down through generations in regions like Santa Catarina Minas, where mezcal is as much a cultural product as it is an economic one. Graciela Ángeles Carreño, a fourth-generation mezcalera, runs Real Minero after her father’s passing in 2016. ] “We’re losing what made Oaxaca different from other regions—our focus on traditions, culture,” Ángeles Carreño told The Smithsonian. As demand for mezcal grows, so does the temptation to abandon time-honored practices in favor of more industrialized production. Many distilleries now rely on genetically identical espadín agave clones to meet the market’s voracious appetite for mezcal. This raises concerns about the long-term sustainability of mezcal production and its environmental impact on Oaxaca’s delicate ecosystem.

They say the best tea starts from the ground up. But in Sri Lanka's tea industry, that ground needs our help. In a previous post, I talked about the urgent need for replanting and the financial challenges our farmers face. But there's a deeper story here – one that's written in the very soil beneath our feet. Let's talk about a crucial step in preparing our tea lands for a new generation: Deep Forking. ❓ Here's what deep forking means and why it's so important: Imagine workers out in the fields, not just scratching the surface but really digging deep, loosening the soil to a full 18-24 inches. It's tough, physical work. But after nearly 150 years of continuous tea cultivation, our land is no longer "virgin." Factors like nutrient depletion, soil erosion, and compaction have taken their toll, impacting the quality and yield of our tea. That is why rehabilitation is crucial. They use specialized forks to break up the compacted earth, carefully removing old roots, up to pencil thick, and stones. This creates a welcoming environment for young roots to penetrate deep and establish a strong foundation. ❌The Challenge: Honestly, it's incredibly labor-intensive. Every stage of tea cultivation requires a skilled human touch, and finding that skilled labor is becoming a real challenge. 🌱 The Outcome: But the results are worth it. This deep forking creates the perfect environment for strong roots and healthy tea bushes. We follow this up with planting cover crops like Guatemala or Mana grass to further enrich the soil. We truly believe in the long-lasting value of Ceylon Tea, and for us, that starts with respecting the land. It's also about respecting our workers, the backbone of this whole operation. But, let me be honest, we can't do it alone. What is the key to the growing environment of #organictea ❓❓❓❓❓❓❓❓❓❓❓❓ <The growing environment of organic tea is very superior.> 1. Climatic conditions: Yunnan has a subtropical climate, with hot and humid summers, cold and dry winters, and an average annual temperature between 15-22 degrees Celsius. This climatic condition is very favourable to the growth of large-leaved tea trees. 2. Altitude: Most of the tea plantations in Yunnan are located in the mountainous areas at an altitude of 1000-2500 metres above sea level, and some of them even reach 3000 metres above sea level. The high altitude has favourable temperature, sufficient rainfall and moderate sunshine hours, all of which help the growth of tea trees. 3. Soil conditions: Yunnan's topography is diverse, with different soil types, but most of the tea plantation areas have more acidic, well-drained soils, rich in organic matter and minerals, which are suitable for the growth of tea trees. 4. Rainfall: Yunnan's rainfall is relatively abundant, with many tea plantation areas receiving more than 1,000mm of rainfall annually, providing ample water for tea trees. 5. Ecological environment: Yunnan is located in the transition zone between southern subtropical and southeastern subtropical, with rich species resources and ecological environment. This provides good natural conditions for the growth of tea trees.
