National Soul Food Month celebrates the heritage and history of the foods and foodways of Blacks and peoples from the African diaspora. Food is a key ingredient in black culture; it is important to understand the origins of soul food are base in subsistence and survival of both life and culture. Soul food originated in the American south during the Antebellum. Soul food used cooking techniques from West and Central Africa, Western Europe, and Indigenous cuisine of North America. The blend of soul food arose from enslaved peoples maintaining their culture despite slavery and blending it with the ingredients that were available to them during the period. Fast forward, soul food is now considered a fundamental part of American cuisine. #SoulFoodMonth

Caribbean American Heritage Month has been celebrated in June since 2006. The Caribbean region includes numerous islands, inlets, reefs and cays and comprises 13 independent countries. Caribbean cuisine is a cultural interchange of African, Chinese, European, Latin American and Middle Eastern cuisines and influences. Hence, celebrating Caribbean American Heritage draws upon many places, people, foods and customs to celebrate. Some suggesting for Caring about “Be-an” for the communities your serve: *Be curious. Ask your residents what cultural foods and food customs bring them joy. Document this information with their preferences. *Herbs, spices and seasonings have strong personalities with most cuisines. Once you know what someone likes, put together a seasoning blend and consider using it on plain rice or vegetables to bring some flavor, familiarity and comfort to otherwise plain food. *Dietary patterns that focus on vegetables, fruits, legumes, whole grains, fish and nuts that are minimally processed correlate with health. Please refer to the infographic for Caribbean foods, herbs and spices and work them into your menu this month. *Food connects people. Have a Caribbean Connection event with food, music and story sharing. Participate in the sense of joy that many proudly feel when they talk about their food customs and traditions. 【The Origin of Chili Peppers 🌶️🌶️🔥🔥】 Chili peppers, now central to Chinese, Thai, Indian, and other Asian cuisines, originated in South America and only reached Asia through global sea trade in the mid-1500s. Chili peppers originated in Central and South America, where they have been a part of human diets for thousands of years, dating back to around 7500 BC. They were first cultivated in Mexico and played a significant role in the culinary traditions of ancient civilizations such as the Aztecs and Mayans. These early cultures used chili peppers not only for their flavor but also for their medicinal properties. The global spread of chili peppers began in the late 15th century when European explorers, including Christopher Columbus, encountered them during their voyages to the Americas. Columbus mistakenly thought chili peppers were related to black pepper and brought them back to Europe. From there, chili peppers quickly spread to Asia, Africa, and the rest of the world, becoming integral to many regional cuisines.
