As I look back on the journey that led to my abstract being selected for the Undergraduate Research Competition at IFT FIRST in Chicago, I'm filled with a mix of emotions - gratitude and a tinge of disappointment. Immense gratitude for being given the opportunity to showcase my work and that tinge of disappointment because I couldn't make it 😔 . My mini-project which I did in my 3rd year on "Assessing Food Safety Knowledge and Practices among Food Service Providers on the Kwame Nkrumah University of Science and Technology, (KNUST) Campus" was more than just a project; it was a labor of love, a test of perseverance, and a reminder that every late night and early morning was worth it. Being part of this prestigious international conference was a dream come true, and although I couldn't attend due to lack of funding, I'm humbled to know that a potential was seen in me and my work will be shared with the global Food Science Community. This moment was a reminder that our passions and dedication can take us further than we ever imagined. This experience has taught me to appreciate the small wins and to keep pushing forward, even when things don't go as planned. I'm proud of myself and everyone who supported me along the way; Institute of Food Technologists (IFT), Abena Boakye, PhD, Stephanie Walaszek and many more; Thank you very much!! The Food Systems Research Center is excited to announce that it has awarded funding to four UVM faculty members to hire postdoctoral fellows to study critical issues in food systems research. The faculty recipients of these awards are Colin Anderson, Gillian Galford, Meredith Niles, and Lizzy Pope. These new positions will support robust and diverse food systems research that addresses four FSRC priorities: resilience to climate shocks; food choices and dietary guidelines, norms and approaches; food policy and governance for regional food systems sustainability and nutritional security; and increasing the availability of productive land while considering local and regional goals. https://lnkd.in/eC_DmyzY

🍏 Mapping Southampton's Food System: Insights from a Student Researcher Lucy Scullard, a postgraduate research student in Biological Sciences at the University of Southampton, shares her reflections on a crucial project mapping Southampton's local food system, funded by New Things Fund. Key findings: 🏘️ 1 in 4 homes in Southampton are over 16 minutes walk from a healthy food outlet 🏥 40.5% of 11-year-olds in the city have excess weight, higher than the national average 🌿 30% of total CO2 emissions are linked to the food industry 💼 Almost a third of local businesses are involved in the food system, employing 6,709 people The project brought together diverse stakeholders to address challenges and propose solutions around these main four themes: 1️⃣ Strengthen local food procurement standards 2️⃣ Upskill locals for better food and nutritional security 3️⃣ Support existing groups working on food insecurity and waste 4️⃣ Plan to become a Sustainable Food Place member Lucy's work highlights the complex interplay between food systems, public health, and sustainability. It's a prime example of how academic research can inform local policy and drive positive change.
