7 years back when I was owning and operating the Cafe, I re-engineered the menu based on Market, Competition and Cost analysis with 100% standardized procedures along with re-writing of all the recipe with complete Yield Management worksheets. The menu was introduced during the Holidays season….. It suddenly popped up on my social media timeline reminder and it has get me to the flash back how I had worked hours to do so all alone and along…..
