Let's talk packaging, colour, and psychology today!! 🧠 When Nature's Path Foods #LoveCrunch first launched their "Dark Chocolate Hazelnut Butter" granola, the packaging was yellow-beige colour 💛 My brain immediately linked it to "Banana"🍌 and thought it was "Chocolate Banana Bread"🍌🍫 Just the other day, I walked down the cereal aisle and saw the #NewLook 👀 Same flavour but.. New colour --> Purple 💜 (Good move, NP team 👏) 🤓 According to some online sources, Purple packaging can mean: 1️⃣ Luxury and quality 2️⃣ The product is unique and original 3️⃣ Because purple foods are high in antioxidants; just like dark chocolate Hippie Snacks also recently launched their #New "Granola+" (ie. high fibre and high protein). Have you noticed the mug in which you are served #coffee? Or have you complained about #flight #food? Perhaps not! Frankly, I have never consciously done that, though I can admit I like #keventers. Whenever asked, it just felt sweeter. It was the chapter "Sensation and Perception" in King's #psychology that changed how I now look at coffee mugs. An article published by Doorn, Wuillemin, and Spence in 2014 studied the taste of coffee in different coloured mugs. Data showed, statistically, that coffee tastes sweeter in transparent mugs rather than in white ones. It is thus argued that what we "feel" is a story weaved by multiple #senses we use to read the environment! The air inside aeroplanes is dry, depleting the mucus inside your noses. The aroma chemicals of your food usually dissolve in this mucus for your receptor cells to pick up. That's why you start salivating even when you can't locate the Samosa shop but can smell it for the delicious food it is. On the aeroplane, less mucus means less smell, and your brain simply cannot appreciate the food for what it is- it has lost its magic in your brain- it tastes bland. A perk is that when you land and indulge in the chocolate pastry, it tastes just out of the world delicious. Isn't it amazing how great a storyteller your brain is? It doesn't just see, smell, or taste; it does a little bit of everything and tailors a story you believe to be true. It is difficult to resist quoting Dumbledore here with a twist "Of course it is happening inside your head Harry, why should it mean it is completely true" Next time you are dining out, try noticing the plate—or don't—and let your brain tell you its passionate story while you just enjoy the food. #brain #neuroscience #foodscience

We each have two ways of smelling things. But which one is activated will change how we experience the aromas. Aromas travelling through the nose from the outside world are interpreted differently to those entering the nasal cavity from food or drink inside the mouth. Each one even activates different brain regions. Aromas from the outside world (orthonasal olfaction) are neurologically associated with ‘wanting’ food or drink. Aromas originating from something inside the mouth (retronasal olfaction) are associated with ‘liking’ a food or drink. The same aroma can appear different for each because the brain looks at each in a different way. Therefore it’s easy to confuse taste with retronasal olfaction. Because the aromas in the mouth can seem different to when we sniffed the whisky, orthonasal olfaction. However, as Dana. M. Small et al 2005 suggest with their study, the difference between the two appears to be strongest with food related aromas. In the case of their study – chocolate. It's important to know when tasting whisky because it helps us to differentiate between smell, taste, mouthfeel, and finish. Breaking them down in a systematic way creates less sensory overwhelm and better flavour identification. #whiskytasting #sensoryscience #scotchwhisky

In fact, the science of taste is really amazing. The human sensory systems allow us to distinguish about 100,000 different flavors. And ofcourse to understand how to create well-balanced and flavourful food or drink, a little knowledge about #howtasteworks is necessary. Broadly speaking, there are five different taste sensations, which are categorised as bitter, salty, sour, sweet and umami. Rumor has it that many people around the world are substituting their morning coffee with a cacao beverage made with pure cacao paste ☕ Tired of the vicious circle of caffeine, many are looking for alternatives to boost their energy throughout the day without the side effects of an espresso or an Americano. While we are also passionate about specialty coffee, we are glad to see that many people are giving a chance to this ancestral food, rich in health benefits, that was traditionally consumed in a liquid form for millennia in Mesoamerica (rather than as a solid chocolate bar as modern society knows it). Ceremonial cacao has almost 1/3 less caffeine compared to coffee. However, it contains theobromine, a gentler stimulant that brings energy without being too harsh on the nervous system.
