Let's get cozy with this heartwarming Butternut Squash Risotto with Crispy Sage. It's the perfect dish for a chilly evening or when you want to impress your dinner guests! Here's your shopping list: * 1 medium butternut squash, peeled, seeded, and cubed * 1 tablespoon olive oil * Salt and pepper to taste * 1 tablespoon butter * 1 small onion, finely chopped * 1 cup Arborio rice * 1/2 cup dry white wine * 4 cups hot vegetable broth * 1/2 cup grated Parmesan cheese * Fresh sage leaves * Extra virgin olive oil for drizzling Instructions: 1. Preheat your oven to 400°F (200°C). Toss the butternut squash cubes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized. 2. While the squash is roasting, let's start the risotto. In a large saucepan or Dutch oven, melt the butter over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes. 3. Stir in the Arborio rice and cook for 1 minute, stirring constantly, to toast the rice slightly. 4. Pour in the white wine and let it simmer until it's almost completely absorbed by the rice. 5. Now, gradually ladle in the hot vegetable broth, one cup at a time, stirring constantly and allowing each addition to be absorbed before adding more. This slow and steady process helps develop the risotto's creamy texture. 6. When the risotto is almost cooked (the rice should be al dente, with a slight bite), stir in the roasted butternut squash. 7. Remove from the heat and stir in the Parmesan cheese. Season with additional salt and pepper to taste. 8. For the crispy sage, heat a thin layer of olive oil in a small skillet over medium heat. Fry the sage leaves for a minute or two until crispy. 9.
