Coffee soda of the month: Orange & Lime. Coffee sodas are my jam. I have one every afternoon. While citrus and coffee might sound surprising, it’s such a good balance of flavors. Citrus, sweet, bitter, bubbles… it’s got it all! I posted about a recipe for a grapefruit coffee soda about a month ago and had a bunch of questions and interest, so here's my newest recipe: Here’s the recipe: 2 oz orange & lime simple syrup 8 oz sparkling water ice 2 oz espresso If you make it in that order, the espresso and sparkling water shouldn’t bubble over the top of the cup. For the orange & lime simple syrup: 25-30g orange zest (~1 naval orange) 150g sugar 100g water 50g lime juice (~1.5 limes) 1. Use a peeler to go around and peel/zest entire orange into saucepan 2. Add sugar and water. 3. Bring to a boil, stir, and then let sit. 4. Strain into another container (I use a fine mesh strainer for cocktails) 5. Juice limes, and strain into your simple syrup (fine mesh strainer) 6. Shake to combine Two coffees in my day are non-negotiable: a cup of hot coffee when I wake up and an iced coffee after lunch. Coffee sodas have been my favorite afternoon drink for a while now, and I switch up the flavor every couple of months!

Roasting Showdown: Drum vs. Hot Air 🔥🌬️☕ Choosing a roaster is all about how you want your coffee to taste! Let's break down the contenders: • Drum Roasting: Beans tumble in a heated drum, roasting through conduction (heat transfer via contact). Slower, richer flavors. • Hot Air Roasting: Beans are suspended in hot air, roasting faster through convection (heat transfer via air currents). Brighter, more acidic flavors. The Drum Roaster Advantage: • Flavor Depth: Longer roast times develop those yummy caramel, chocolatey notes. • Control & Creativity: More influence over flavor nuances during different roast stages. • Bean Versatility: Handles a variety of beans and roast levels with delicious results. Fact: Most specialty coffee is drum roasted to highlight its unique origin flavors! #drumroasting #hotairroasting #roastingstyles #flavormatters #BehindTheBrew

Sure, Italy is known for its abundant art, culture, and architectural offerings, but our personal favorites tend to be of the culinary variety: pasta, gelato, and delicious beverages. Here's a take on one of our absolute favorites, The Saronno. We find it perfect to snuggle up with next to a fireplace on a chilly winter night! 1½ ounces alcohol-free amaretto (Lyre's Spirit Co is a great choice) 1 ounce alcohol-free bourbon (Spiritless Kentucky 74 is our go-to) 1 ounce fresh lemon juice 1 teaspoon simple syrup ½ ounce egg white, beaten Lemon slice or twist, for garnish Maraschino cherries (Luxardo S.p.A. are our favorite) Combine the N/A amaretto, N/A bourbon, lemon juice, simple syrup, and egg white in a cocktail shaker and shake without ice, about 10 seconds. Strain over fresh ice in an old-fashioned glass. Garnish with the lemon peel and brandied cherries. TIP: To make a delicious simple syrup, heat 1 cup sugar in ½ cup water in a pot over low heat until dissolved. Cool to room temperature before using and refrigerate after use.

Top Note found our way into Imbibe Magazine this past month. We are thrilled to be part of the mix of grapefruit sodas tasted as part of their round up of the category! Why this list now? Palomas are hot hot hot. And this cocktail is extremely easy to craft with a great grapefruit soda. But, besides taste, #barmanagers need to get to the nitty gritty, and that is costs. We would add a couple of nuances to this round up; 1. Imports on this list are all in 200 ml packages or smaller, and they are all higher, by far, in sugar....yes, the US products are not sugar bombs (surprise!). 2. If you own a bar program, imports cost you....You just don't get the same number of cocktails out of the case. The single serve/bottle or can is not a good look if you are seeking sustainability either. 3. Domestics are in bigger bottles or cans, and serve perfect 2 drinks. But, sugar levels are all over the place. Find one that fits your customer preference and cocktail style. 4. If flavor matters (it always does), Top Note gives you the most real juice in our grapefruit soda, and is a gold medal Grapefruit. Find the entire write up here. https://lnkd.in/dcqiyJnS
