We are four days away from our inspection from the health department for our new CloudKitchens location in Philly. It took much longer to get to this point, and I suspect it has much to do with inspectors' holiday schedules. That's an excellent point to remember as we get to the end of 2024 and to have all of our new locations leased and submitted to planning before November 1st.
Once approved, we'll need a week to open our doors and start cooking pizzas there officially. We'll make our dough there with our Hobart 60 mixer, just as we do in other locations, and grind our cheese ourselves. Our Toast equipment must be installed; everything else is ready, including our DoorDash setup. Of all of our 3rd party marketplaces, DoorDash is on top of things!
Our initial marketing relies on our register receipts that promote our $199 pizza subscription program, where we make a pizza once each week for 52 weeks when they redeem using our app or website. We'll continue to use Owner.com platform for the next few weeks, but we intend to move to a new platform that can handle our enterprise growth. So far, Lunchbox looks like the platform we will migrate to; Trevor Kacz, Shawn Colbert, and Chrissy Ouellette have been extremely helpful in working through our requirements. It's not 100% done yet, but I feel good about the integrations needed to make this work.
We're also testing a new micro-influencer platform to drive subscription sales once we open. We've never used Wise Assistant before, but Michael Diego had a pretty solid presentation, and as you know, we like to test platforms! If their case studies indicate the success others have had, we'll likely use this across all of the 40 locations we are targeting for 2024. (I did warn him that I write about the good, the bad, and the ugly of things we test, and he wasn't afraid to continue working with us.)
Hopefully, we'll have a good Tuesday and be on our way with store #3, then to Charlotte for the 4th opening.
