Yesterday when I was discussing about product development with our interns at Food Nest, Ishwari Tapre rightly questioned, do nutritionists really have any good role in food industry. I proudly explained, nutritionists have a big role in food industry. My basic post graduate degree in Nutrition has helped me a lot in product development as we think beyond a good shelf life product. Understanding food science, the absorption of particular nutrients, bioavailability of food, combination of nutrients to make it a complete amino acid profile, all of this is extremely important to develop a genuine product. Food industries are now hiring nutritionists also for different roles and responsibilities and it makes me happy. As more than a decade back, when I wanted to join a company, my Masters degree in nutrition was not relevant. As a food scientist, I’ve seen the incredible impact of collaborating with professionals from diverse fields, including microbiologists, chemists, biologists, and agriculturists. These collaborations enable us to tackle challenges from different perspectives, leading to more comprehensive and innovative solutions. The partnership between food scientists and microbiologists is especially valuable. When developing new food products, microbiologists provide critical insights into which beneficial microorganisms can be incorporated to enhance the product and which harmful ones must be eliminated to ensure safety. Interdisciplinary collaboration often sparks new insights that emerge from the blending of various fields. Each expert contributes unique ideas that drive innovation. For instance, the distinct flavors added to yogurt, ice cream, and cakes are created through chemical processes involving expertise from multiple disciplines, enhancing the taste and aroma of our products. As a food scientist, I am always open to collaboration. Whether you’re involved in research, product development, or quality assurance, I believe we can work hand in hand to expand the possibilities in this field.
