This recipe is a creamy, delicious, and nutritious hummus substitute for avocado-based guacamole. You may have already heard the news – chefs around the world are ditching this unsustainable fruit! But why? For starters, avocados have a large carbon footprint compared to other produce and can require up to 320 liters of water to grow (versus just 5 liters per tomato!), making them unaffordable for the local communities where they are grown. In fact, they have become a global commodity, with rising demand resulting in deforestation, loss of biodiversity, and water shortages affecting several indigenous populations around the world. Zucchinis, on the other hand, have a lower carbon footprint producing less CO2 emissions compared to other fruits and vegetables, including avocados. This makes their production, which includes not only farming but also packaging, transportation, and storage, relatively sustainable without significant damage to the environment (air, water, land, soil, and so on). Couple them with some fresh cilantro or parsley and you have a vibrant green dip, similar to guacamole but with a smaller environmental impact. Read more in our blog post. This has raised many questions about the sustainability of farming, production, and enjoyment of this fruit. Speaking about measuring regenerative outcomes…. Where does your beef come from? All cattle, grain or grass finished, spend most of their life on grass. Most beef comes from cow calf operations that operate on pasture land and sell caves into feedlots for finsihing on grain the last few months of their lives. Regardless of if you prefer grain or grass finished beef the pasture management practices while to cattle are on grass most of their lives makes a big difference when it comes to land outcomes. Of the 900M acres of agricultural production roughly 2/3 is pasture land raising animals. It matters. Ranches managed with holistically or adaptive planned grazing have higher carbon storage, water capture, soil health, biodiversity above and below ground because they are mimicking natures grazing patterns. So, where does your beef come from? 🙋🏻♀️I get all of my meat(beef, chicken, and pork) from REP Provisions. I’ve been to the ranch and it’s buzzing with life…in a Alice in Wonder Land sort of way. You feel your place in the ecosystem, and feel so small relative to all the abundance. Everything is so alive. THE STORY BEHIND YOUR COFFEE CUP: THE FIRST SORTING STEP 👩🎓 Following the meticulous harvesting of our coffee cherries, a crucial initial sorting step is undertaken 🕵♂️ . Even if we are super careful during harvest, certain cherries may show imperfections such as being unripe, containing blackened sections, or those dried-up leftovers from the last harvest – (even the best pickers slip up). Analyzing each cherry becomes particularly challenging when harvesting from tall trees or when cherries are less accessible. Therefore, this is better to conduct the harvest in the early morning or early afternoon, before the sun diminishes 🌄. Morning harvesting not only facilitates a more careful analysis but also results in sweeter cherries. Much like other fruits and vegetables, the morning marks the period of sap ascent in the tree. 👀 Visual Sorting Going back to the sorting process, we meticulously eliminate visually identified defective cherries, although their occurrence is generally minimal due to our careful harvest practices. But you know, sometimes with different factors we might lose up to 5% during this stage. This challenge is particularly pronounced with the yellow Bourbon variety, where adverse weather conditions complicate the differentiation between ripe and unripe cherries growing in close proximity. 🛀 The Float Test Following the initial visual sorting, a secondary step often involves the floating sorting method, designed to further eliminate underripe, overripe, or defective beans. We submerge all cherries in water and remove those that floats (like gnocchi). While Matayoshi Farm, with its small-scale production, retains all cherries that pass the floating sort, larger farms may opt in addition for density-based sorting, allowing them to sell to diverse markets. The denser the cherry, the sweeter it is! 🍒 Doing the floating sort before the fermentation process helps removes undesirable cherries early. At this stage we finally lose from 50% to 10%, influenced by factors such as plant type, harvest timing, and prevailing weather conditions throughout the year. Next stages involve additional sorting procedures and potential losses to make the best cup of coffee.
