Easy Pork Tenderloin and veggies Ingredients: 6 oz Cooked Pork Tenderloin (1 leaner) 1 oz Mexican Cheese (1 healthy fat) 1/2 cup Diced tomatoes (1 green) 1/2 cup Green beans (1 green) 1 cup Chopped lettuce (1 green) 1/4 tsp salt (1 condiment) 1/2 tsp ground pepper (1 condiment) Directions: 1. Assemble Salad as shown. 2. Place raw pork chops on a baking sheet, season with salt & pepper, and bake at 400 F for 25 minutes. 3. Serve with green beans and enjoy! (Tip: It tastes even better if you make this at least 8 hours ahead of time.) You can keep it plant-based … or you can add a can of tuna or shredded chicken to boost the protein content! Makes 2 main or 4 side servings Ingredients: 2 x 15 ounce (425 g) cans black-eyed peas 1 tomato, seeded and chopped 2 bell peppers, seeded and chopped ½ red onion, diced 1 carrot, chopped 1 stalk celery, chopped 1 Tbsp fresh parsley leaves, chopped 3 Tbsp apple cider vinegar 2 Tbsp extra-virgin olive oil Sea salt and fresh ground pepper to taste Enjoy!

Next time your kids (okay let's be real... you too) want some McDonald's or Chick- fil-A nuggets, grab some chicken breasts and follow this recipe instead. You avoid all the junk ingredients, it's more cost-effective for the budget... and I think they taste better too. To be honest, these BAKED chicken nuggets (Italian-style of course) came out better than I anticipated. Earlier that same week I created an Italian chicken nuggets recipe where I fried the nuggets in a skillet. Yeah... those were amazing too so the bar was set pretty high. But I decided to try them baked in the oven instead of frying. Most times when I create fried food recipes, I get asked by my followers if there are healthier options. So I gave it a shot with this one. In the oven they went at 400F for 20 minutes (if I recall correctly). Anyway, it's all in the video below where I step you through the whole creation process. Philly Cheesesteak Meatloaf INGREDIENTS 1 lb ground beef 1 cup bread crumbs 1 egg 1/2 cup milk 1/2 cup diced onion 1/2 cup diced green pepper 1 cup sliced mushrooms 1 tablespoon Worcestershire sauce 1 teaspoon garlic powder Salt and pepper to taste 1 cup provolone cheese, sliced 1/2 cup beef broth 1/4 cup ketchup 2 tablespoons brown sugar 1 teaspoon mustard INSTRUCTIONS Preheat oven to 350°F (175°C). In a large bowl, mix together ground beef, bread crumbs, egg, milk, onion, green pepper, mushrooms, Worcestershire sauce, garlic powder, salt, and pepper until well combined. Press half of the meat mixture into the bottom of a loaf pan. Lay the provolone cheese slices over the meat, leaving a small border around the edges. Cover with the remaining meat mixture, pressing the edges to seal. In a small bowl, whisk together beef broth, ketchup, brown sugar, and mustard. Pour this sauce over the meatloaf. Bake for 1 hour or until the meatloaf is cooked through. Let it rest for 10 minutes before slicing.
