It's an easy way to get a high protein meal in my body.
We Indians are a salt-sensitive population therefore it is crucial to shine a light on a prevalent issue within Indian diets: the consumption of high salt foods. Studies have shown that a high-sodium diet can lead to various health complications, including hypertension, cardiovascular diseases, and kidney ailments.
Here are some examples of Indian foods that are often rich in table salt :
1️⃣ Pickles:
A quintessential accompaniment to Indian meals, pickles are often high in salt content due to the pickling process. Varieties like mango pickle (aam ka achar), lemon pickle (nimbu ka achar), and mixed vegetable pickle (achar) are popular choices.

The start of our base for the roast chicken stock. This will be done twice more to get the finish stock. Reduced for flavour to get the finished jus. It's official. Winter is here. And with it, my innate need to hibernate and stay cozy.
I wish I could share this white bean chicken chili with you in person, but luckily I CAN share the recipe so you can enjoy it as much as I have. It is jam packed with fiber, protein, and the nutrients your body is craving this time of year. It's so satisfying during these freezing months!
Enjoy and stay warm out there!
Ingredients:
3-4 chicken breasts (depending how big they are, they MUST be able to fit at the bottom of the crockpot)
1/2 tsp salt
1/2 tsp black pepper
1 tsp cumin
1 tsp chili powder
1 Tbsp smoked paprika
1/2 tsp cayenne (eliminate if you do not like spicy food)
1 tsp dried oregano
1 4oz can green chilis
1 yellow onion
1 red pepper
1 16 oz bag of frozen corn
8 oz of cream cheese
2-3 cups of white beans (I used gigante)
3 cups of chicken stock
1 bunch cilantro (about 1 cup) - save half to sprinkle on top of the chili
Optional toppings: avocado, scallion, limes, tortilla chips, and more smoked paprika =)
Instructions:
Add the chicken to the bottom of the crockpot
Add salt, pepper, cumin, paprika, cayenne, and oregano
Add 1 can of green chilis
Chop the onion and it add to the crockpot
Chop the red pepper into very small pieces and add it to the crockpot
Add 1 bag of frozen corn, cream cheese, white beans, half of the cilantro, and chicken stock to the crockpot
Let cook on LOW for 4.5 hours. This may vary depending on your crockpot. Check at 4.5 hours, if the chicken is pink, it needs more time.
Once cooked, shred the chicken with two forks.
Place the shredded pieces back into the crockpot to absorb the liquid and stir until it is all one consistency.
Serve and add toppings of your choice!
