I had listened to an illuminating podcast. Essentially 600 million people work in the industrial food system. The interesting observation is that if global fertility rates settle to match that of Europe, the 8.2 billion global population will drop to 800 million in 125 years. I think that we need to look at the food system through the lens of long term stability. What system can be operated, maintained, and sustain through ancillary shocks like weather and disease by the fewest number of people is the way we need to view the food system. Can you install a process line that last 80 years and operates with the fewest possible headcount? This goes from an efficiency goal to a goal of maintaining industrial standards of living with the fewest number of working age population. It may be a bit sad, but this is likely the future of the food system.
