Recently, I came across yet another video of Ina Garten making what she calls “baked risotto,” and it honestly makes me question the direction of the world. Do we not care about authenticity anymore? Are we really content with mediocrity? Has being misled become the new standard? At what point do we say enough? Food isn’t just about convenience—it’s history, technique, and culture on a plate. And this is not limited to Italian food - but all food around the world. Stripping away the actuality and essence of a dish in the name of ease doesn’t make it innovative; it makes it something else entirely. It makes people who truly understand food, question if you do.
