Lee 2 Beauty! Emulsion stability and quality can be affected not only by the surfactants and other ingredients in a formulation but also by the method by which the emulsions are processed. In other words, both CVs and PVs are important to the properties and the stability of the emulsion products manufactured. Many surfactants are soluble in both water and oil. In a series of experiments conducted at room temperature, interestingly, it has been discovered that initial placing of the surfactant in the oil phase produced a finer and more stable emulsion than the same formulation made by initially placing the surfactant in the water phase. By carefully observing emulsion samples under a microscope at different stages of emulsification, we see that possibly different mechanisms were involved in forming the emulsions, depending on the initial location of the surfactants. When the surfactants are placed in the oil phase, there is a tendency for an initial formation of a (W/O)/W-type double emulsion. Continued mixing of this emulsion eventually promoted formation of an O/W final emulsion Using the identical formulation, but simply introducing PV in making the emulsion by placing the surfactants initially in the water phase, the effect on emulsion quality was quite significant. In this case, an initial formation of a double emulsion was not observed, but the emulsion formed had significantly larger emulsion droplets than did the same formulation made by initially placing the surfactant in the oil phase. The results of these two experiments suggest that the initial surfactant location can be a very important factor in making emulsion products. Using more surfactants does not always assure better stability, but a better understanding of the basic mechanism and the Z-Point can help us to promote effective use of surfactants and improve product quality and stability.
