Last week we visited our customer birdbros in the UK as part of a trip together with our friends from Experience Data and Experience Fruit Quality. They use their deep knowledge and experience of transforming data into information and better business decisions, to help improving the process of riping, grading, packing and shipping avocados and other stone fruits. We looked at the similarities and differences in grading and packing eggs compared with grading and packing avocados and had great discussions about that with operations and management of our respective customers. Which pallets of ungraded eggs should we run now to fulfill our orders of today in the most effective way? Which pallets of avocados should we run now to make sure we deliver our orders in time whilst making sure the consumer is getting the avocados when they are ready to eat? These – and many other - challenges have a lot in common and we all gained insights which will lead to better solutions and innovation, sooner or later. Another aspect in which our customers are equal is the passion and absolute will to deliver the best product and the desire to constantly keep improving the process. Very motivating for both EFQ and Ovotrack. We are grateful to Marco de Jong from EFQ and to the people at Bird Bros, Mission Produce, Charlston and Mehadrin for their cooperation. Thanks for your openness, transparency and attention! #eggs #avocados #grading #data #information #insights #foodprocess #sharingknowledge #improving #process

When making muffins, many campuses opt for freshly ground wholemeal flour. This type of flour is packed with vitamins and nutrients, but it doesn't store well and contains proteins that are not fully formed. To achieve the best results in pastry baking, it's recommended to use the flour immediately after grinding. https://lnkd.in/ebu9kzcT
Freshly milled #wholewheat #flour at public schools is happening. Why? Because it creates a product that is unique, tasty, and nutritious. In addition, it supports local grain producers with a different supply chain strategy. Not easy, but possible. When Denisse Pena, MPH , Foodservice Director at South Monterey County Joint Union High School District found out about our Shandon-San Miguel School Districts partnership, she was eager to learn more about the school #stone #milling operation that allowed those School districts to serve more local #wholegrain fresh foods. Denisse visited and learned from School foodservice directors Gelene Coehlo and Lauren Thomas and applied for the CDFA Farm-to-School grant that allowed her to purchase the same New American Stone Mill they had. With a lot of work, passion, and vision, their school district, now Eat Real Certified, will be milling #California #Wheat and making delicious whole grain foods. Recipe development by Alejandra Andrade and Teng Vang with my support, has allowed them to make this works. We look forward to continue to support Denisse and her team, and any other school district that joins this movement. Is it a program that can be replicated anywhere else? absolutely 💯 Is it even worth it? Once you see how much students enjoy these freshly whole grain made foods, absolutely 💯. Is it sustainable? It depends on how you define it. For us, as long as those kids have one good experience knowing they have had a #wholegrain muffin, bread, or pasta and they have enjoyed it, we call that successful and sustainable because it is a core memory, they would want to have it again! It is that simple! So yes, absolutely 💯 Thank you to Nora LaTorre and her entire team for their support and spreading the word about #grains at #schools #Wheat2School

Embrace Constant Gradual Improvement. In the world of American Wagyu beef, the pursuit of excellence is an ongoing journey, and at Black Hawk Farms, we're dedicated to the relentless pursuit of perfection in every aspect of our craft. One of the key metrics we focus on is the marbling score of our beef. Marbling, the intramuscular fat that gives beef its rich flavor and juiciness, is a hallmark of quality in Wagyu beef. Our commitment to excellence drives us to continually elevate our marbling scores, ensuring that every cut of Black Hawk Farms American Wagyu beef delivers an unparalleled dining experience. But achieving higher marbling scores isn't just about a single leap; it's about constant, gradual improvement. It's about meticulous attention to detail at every stage of the process, from genetics and feeding protocols to animal care and handling, and finally, to the expert craftsmanship of our butchers. By focusing on continuous improvement we are raising the bar for ourselves each week. Each incremental gain in marbling score represents a triumph of dedication and expertise, resulting in beef that exceeds expectations and delights the palate of discerning consumers. At Black Hawk Farms, we believe that the pursuit of perfection is a journey, not a destination. Join us in celebrating the artistry of American Wagyu beef and the endless possibilities that come with Constant Gradual Improvement. #Wagyu #ConstantGradualImprovement #BlackHawkFarms #Marbling #Beef
