Back to Basics. Please note, this post has been edited to properly name the protein that binds the farce together. Thank you Tony Chimento, for noting my error and bringing it to my attention. greatly appreciated! This photo may not be much to look at. But it demonstrates a basic and very important concept in making sausages. The bind of the meat.  The bind refers to how well the meat stays together. We check it with the farce in a raw stage. The bind affects the cooked texture. If you have not built up a sufficient bind, the cooked sausage will be crumbly. We create the bind by “working” the meat. The action of working the meat is similar to kneading dough. We are working a particular protein in the meat, myosin. When we “knead” myosin it becomes sticky. That stickiness is what binds the meat together.  The farce in the picture is from a coarse ground pork and beef sausage that was hot smoked. I am demonstrating; checking the bind by holding a small amount of farce in the palm of my hand and turning my hand so my palm is facing the down. The farce needs to stay on my hand by itself, as you see in the photo, for at least 10 seconds. This one passed the test easily! If it had not, a little more “kneading” would have corrected the issue. #Sausage, #Smoked_Sausage, #Pork_and_Beef, #Bind

Cut back on food waste and balance your blood sugars with this recipe: Yields 32oz Ingredients 🍉2 cups watermelon rind, peeled and thinly sliced 🍉2 cups green cabbage, thinly sliced 🍉1 cup carrot, shredded 🍉1 cup red onion, thinly sliced 🍉½ jalapeño, thinly sliced (optional) For the brine: 🍉2 cups white vinegar 🍉1 cup water 🍉2 tbsp sugar 🍉1 tbsp salt 🍉1 tsp dried oregano 🍉1 tsp black peppercorns 🍉2 cloves garlic, thinly sliced 🍉1 bay leaf Instructions • Heat the water, vinegar, sugar, and salt in a pot over medium-high heat, stirring until dissolved. • Add the rest of the brine ingredients and bring to a boil. Set aside while it cools. • Place the cabbage, watermelon rind, carrots, red onion, and jalapeño in a bowl. • Pour the brine over the ingredients in the bowl and mix well. Let the curtido cool to room temperature. • Place the curtido in an airtight sealable jar and cover with brine, ensuring all the ingredients are submerged before sealing. Let sit at room temperature for 1-3 days before refrigerating. • Refrigerate for at least 24 hours before serving—the longer it marinates, the tastier it is! If you’re looking to spruce up your burgers with something totally new, try out these slightly sweet and tangy sliders! Serves 12 Ingredients: • 1 egg • ½ cup flour • ½ cup panko breadcrumbs • 1 teaspoon onion powder • 2 teaspoons dried parsley or thyme • (1) 8-ounce goat cheese log • Olive oil, for frying • 1 cup balsamic vinegar • 12 premade slider patties • 1 cup raspberries, smashed • 12 slider-sized buns Instructions: 1. Line up three small bowls for dredging. In the first bowl, gently whisk an egg. In another bowl, add in the flour, and in the last bowl, combine the panko breadcrumbs, onion powder, and parsley or thyme. 2. Remove the goat cheese log from the fridge, and cut into 1-inch discs. Add about 2 inches of oil to a sauté pan, and bring to medium-high heat. 3. Bread the goat cheese by coating each piece in flour, then egg, and, flour, egg, and then breadcrumbs. Place gently into the sauté pan, and fry until golden brown. Remove from the pan, and place on a paper towel to dry some of the grease. 4. In a small saucepan, bring the balsamic vinegar to a boil, and reduce until thickened. 5. Season the patties, if desired, and then grill for three minutes per side. While the patties are grilling, use a fork to smash the raspberries in a small bowl.
