I caught up this week with Rajat Bhageria, who I've been talking to about food robotics for more than five years.
Back when Bhageria spoke at our first-ever food robotics conference called ArticulATE in 2019, he was only then beginning to sketch out what his company and his product would become. At the time, he was primarily a VC, running his deep tech early stage investment firm Prototype Capital, but was also interviewing folks who ran large food businesses to figure out what the pain points are and what parts of the food making business would benefit most from automation.
He told me this led to a realization that food assembly and plating were more labor-intensive. He set about building his robot and eventually got his technology into big customers like Amy's Kitchen and Sunbasket.
Bhageria says the company will eventually tackle automation for other lower-volume environments like restaurants, but says one area he doesn't envision his robots going into: The home.
People don’t want to maintain a robot in their house, buy it, refill it, or take care of it. They prefer having meals made in ghost kitchens by robots and delivered to their homes.”
