At age 33, I started a whole new career to become a chef. It was one of the most exciting yet difficult things I've had to do. • I didn't know anyone • The job required different skill sets It was 3 years of massive growth. 👇 Here are 5 key lessons about starting something new: ——— # 1: Throw Out Your Ego After culinary school, I worked at my dream 3-Michelin ⭐️ restaurant - Eleven Madison Park. My friends' most-asked question revealed a lot about expectations versus reality. • Friends: "Are you a sous chef now?" • Me: "Uhh, no. That takes at least 5 yrs+. I'm a commis––THE bottom of the bottom rank!" Also, no one cares who you were in your previous life. 🤷🏻♀️ ——— # 2: Age Doesn't Mean Sh*t! 🙀 I was at least 10 yrs older than my fellow cooks. Some were 18, not even legal to drink. Many were super talented. Instead of sulking about your age and how late you're in the game, learn from them. + Don't expect special treatment b/c of your age. ——— # 3: Use the Late Start to Your Advantage 🪄 My secret weapon was utilizing my 11-yr experience on Wall St. I had: • an Excel system to prepare my mise en place • more grit b/c I've worked in demanding roles before • a very clear and audacious goal. Cooking wasn't just any "job" to me You may be a 'newbie,' but everything you've done up to this point counts. Use them to your advantage to differentiate yourself! ——— # 4: Tough Moments are Part of the Course 🔪 Once, a careless cook's knife dropped on my foot and cut through my thick waterproof shoes. I couldn't walk but told my chef I will stay to finish the work. Nasty cuts & burns happen, yet chefs still march on. Suck up the challenges – you'll come out stronger. ——— # 5: Don't Complain. There's a Reason for Each Step 😖 I was grumpy when I was told to do less glamorous work: • Chef: "Work in pastry for a month" → grumpy • Chef: "Work the dinner shift indefinitely" → grumpy • Chef: "Work in the casual side of the restaurant" → grumpy I later realized these tasks were necessary steps to propel me further, faster. ——— ✅ The Result: After just 11 months as a newbie cook in my second restaurant: • I was handpicked to cook for the 2018 Winter Olympics VIP gala in Korea with my executive chef • I earned a promotion to the 4th highest cook in the rank (usually takes 2 yrs) • + many more highlights! 👍 Apply these 5 lessons to thrive in any new endeavors, especially as a late starter! ——— TL;DR - 5 key messages to remember when starting something new (esp. as a late starter): • Throw out your ego • Age doesn't mean sh*t! • Use the late start to your advantage • Tough moments are part of the course • Don't complain. ✨Practical CV Tips for Hotel Jobs in the Middle East Part 1 - Commis Chef Here are 6 tailored CV tips for a Commis Chef applying for hotel jobs in the Middle East: 1. Highlight Your Experience with Regional Ingredients Emphasize any experience you have with local ingredients such as spices (saffron, cumin, sumac) and dishes (mezze, grilled meats, or traditional Middle Eastern desserts). Hummus, muttabel, tabbouleh etc. Knowing local flavors is a key asset. Or, if you are applying for a specific restaurant, tailor your CV to reflect the cuisine! 2. Mention Experience in High-Volume Kitchens Hotels in the Middle East often serve large numbers of guests, especially during busy seasons like Ramadan and Eid. If you’ve worked in high-volume kitchens, mention it. Include details about the number of covers you’ve handled or experience with large buffets and banquets. 3. Hello fellow culinary members and hoteliers 2 days back I went to a hotel for my food trial Ive already send them my menue for food trial and ingredients for that, but when I reach there they don't have my given ingredients and for the position I went before my food trial the chef told me that they don't the that particular position. But in our conversation before on call they told me that they have the position I'm looking for, and now when I went there after spending my money at the time im jobless they want to take the advantage of my situation and they told me that my cv is not the match so why they call me for trial. They broke my confidence , they told me the give me a junior position if they like my trial , so at that time I leave and didn't perform my trial. I just want to ask from Hr's and ex. Chefs that if u don't have the position so please don't post for the vaccancy, and if you calling someone food trial for CDP position and told him before trial that you only have the position for commis. If you already know that a person who is jobless so don't try to take the advantage of someone's situation. I have always adopted a hands-on approach as a chef, regardless of the setting, motivated by my readiness to assist whenever needed and engage actively in kitchen activities. The excitement and fast pace of the culinary field captivated me and led me to pursue this career. Recently, I have observed a rise in the use of the term "hands-on chef" among hiring teams and recruiters. I have seized opportunities for self-improvement in various work settings, considering each placement as a chance to showcase my skills and enthusiasm. Let's explore the importance of being a "hands-on chef." In search of a 'Hands-On Chef' who must handle admin tasks, work like a Commis, but is offered minimal pay while being misled about the true state of your property that requires more than just an international chef. Your entire kitchen needs upgrading and staff training to reignite the passion. Realistically, you risk losing another skilled chef if your team, with over 20 years of experience, fails to embrace growth and new techniques. It's clear, you are expecting miracles in a place that requires much more than that. Attention, Chefs! Stay alert!
