Here are a few tips for dialing in espresso: ☕Coffee Selection: The coffee must be fresh! I recommend using coffee between 5-30 days from roast date for best results. ☕Clean Equipment: Make sure you're tasting the fresh coffee and not the coffee from months ago! ☕Recipe: This can fluctuate to preference and style, but beginners should start with 18g of freshly ground coffee in, and aim for 36g of extracted liquid out, within 24-32 seconds. This should yield roughly 1.5oz (standard for US). ☕Making Adjustments: Extraction happening too fast? Adjust your grind to be finer. Extraction happening too slow? Adjust your grind coarser. I recommend thinking of your grind size like sand vs pebbles on a beach. Water flows more slowly through sand. ☕Final Tweaks: Ensure all of the above is in spec before moving to advanced measures such as adjusting the temperature, dose, or yield... we'll talk about this on a future post. ☕Enjoy: Preferably with a friend or with a good book. It's iced coffee season, and we wanted to show you how you can make it with some simple tools and a good recipe. For iced coffee, we recommend using your favorite pour over method, and a Variable Temperature Kettle, but you can also adjust the recipe for a coffee brewer! ☕️🧊 RECIPE - Heat water in an electric kettle to 203°F (95°C) - Add 165 grams of ice into a coffee decanter or server - Pre-rinse your filter in the sink to avoid heating your decanter - Add 30 grams of finely ground coffee into your dripper - Pour 60 grams of water in circular motion to the dripper, and bloom the coffee for about 30-45 seconds - Pour an additional 150 grams of water. Let it draw down for about 1 minute - Add the final 100 grams of water and let it drip down completely. Grind Finer = Extract Higher By using a fast flowing filter like Aji Filter you are able to grind your coffee finer, extract a larger amount of coffee and explore a unique coffee brewing style. Most beginner pour over coffee brewers have experienced stalling, this is when your grinder creates a whole bunch of different sized particles that clog up your coffee filter. The best ay to correct this is to purchase a better grinder or to purchase a sieve and physically sift out these fine particles. Another cheaper and less laborious option is to use a faster flowing coffee filter like Aji Filter. The PERFECT treat for the 4th of July or any hot summer day! Watermelon Pizza 1 large Watermelon 1 can full fat Coconut Milk, I use Native Forest brand. Fresh fruit: Sliced strawberries, blueberries & raspberries. Fresh mint leaves -Chill a can of coconut milk in the refrigerator overnight. -Slice a large watermelon down the middle and cut a large round piece about 1.5 inches thick. This will be your “pizza” then cut into triangle slices. -Make the coconut whipped cream by adding just the hardened coconut cream from the can to a mixing bowl. (Save the watery part- it’s great for smoothies!). Use a hand mixer to whip the coconut milk for a few minutes until it resembles whipped cream. -Place some of the coconut cream on each of the “pizza” slices. Top with pieces of fresh fruit and mint leaves. So good!
