What if I told yout that the farmer that is revolutionizing poultry breeding is… vegan? You need to listen to this story. In our last episode "How Innovative Farming Can Tackle Climate Change", we had the chance to talk with Ruud Zanders, founder of Kipster. But what is more intriguing about his project is what came before. Ruud used to be a poultry farmer, who learnt from family and university that there was one focus only: Produce as much as possible for the minimum price. Unfortunately, Ruud went bankrupt and he closed his farm. But then, he started wondering about the work he had been doing for many years. And a question arised: “If we produce cheaper and cheaper… who's paying for that?.” And he reached the conclusion that the ones who were paying were not any other humans. It was the animals. And that is how he began his story with Kipster and his quest to understand the role of animals in our food system. Coccidia are a group of microscopic, spore-forming, single-celled parasites that belong to the class Conoidasida within the phylum Apicomplexa. These parasites infect the intestinal tracts of animals, including humans, birds, reptiles, and livestock. In my work experience, Finca Pecuaria, I have managed to learn the ways of controlling this disease which is a significant issue in cattle farming. One of these ways is the application of lime directly on pasture which has got strongly basic properties since most Costa Rican soils have got high acidic properties. These basic properties help to alterate the environmental conditions making it inhabitable for the parasite Coccidiosis. This practice has contributed to the prevention of severe health issues in our cattle farm as well as production and economic losses.

NGUNI BEEF Why Nguni? I really have 1 criteria. I want to select the animal that is the most vigorous, healthy and robust expression possible. I don't want to have to nurse, aid and treat our livestock. Why not? I believe if we can give the animals all the tools to maintain and express amazing health then we have achieved the highest level of welfare. Selecting for traits isn't inherently bad but everything has a trade off. Sometimes we know what we are trading, sometimes we don't. When we make breeding decisions based on things like colour, eating quality, marbling, tenderness, weaning weight - are we making decisions in the animals best interests or the markets best interest? I understand as well as anyone that farmers need to serve the market and make a profit. My market is people that want to see thriving animals that are allowed to express themselves and we are doing our best to be custodians that help them accelerate natural selection and enhance natural processes. I believe if the animals vitality is amplified, if their welfare is too notch and our farm ecosystem is happy (not poisoned) then the meat quality and taste will speak for itself.
