We have been using MOX in wineries starting with Oenodev in the late nineties. With an eye on Quality and Quality Systems, there are three measuring activities that stand out as critical in this process: 1. Weight measurement of O2 2. Temperature of the wine being MOX'd 3. O2 flow regulation If using MOX in your winery, how are you ensuring the accuracy of these measurements? Do you have a calibration system in place that ensures measurements critical to Wine Quality are, in fact, reporting data that is meaningful and actionable?
