#Quickknowledgepost #thefirstwinesniff After the wine has been swirled, bring the wine up to your nose and just give it a couple of quick sniffs. Sensory professionals call those rabbit sniffs or bunny sniffs. The idea is not to plumb the depths of aromatics of the wine at that point, but merely to see if the wine has any conspicuous problems.

What Makes Wine Go Sour? According to Rav Hiyya… Yes, one of the many important questions the sages of the Talmudic period opined on was perhaps the most important one - what makes wine go sour (for those non wine drinkers - that greatly decreases the value and taste of the wine). As my wine drinking friends know, sometimes you get a bad bottle, known to some as “corked.” This means that of 10,000 bottles 99% are wonderful, but 100 somehow turned into vinegar. If that ever happens to a bottle of my wine, I just tell the consumer to bring it back for a new bottle - we are ready to suffer the 1% of potentially bad bottles. There are many reasons why this could happen, but in today’s daily TAMID study (Tractate Bava Batra 98) we find a fascinating connection made by Rav Hiyya between the bottle and the owner - that it is somehow the owner’s bad fortune (or “Mazel”) that causes the wine to turn. In that case a replacement bottle might not help… As we come to the end of a very bad year for the Holy Land and its inhabitants, I would like to bless all of us with only good fortune in the coming year, and that we not be the cause of any wine turning sour. But until the hostages are free and peace reigning throughout the land and in our neighboring countries all of wine will taste just a bit sour.
