The Merrimack Black is back! Its third batch in as many years. This sauce was our first collaboration sauce back in 2022, and is only possible with the active involvement from our partners. There's the three step process that begins with Navigation Brewing Co making their Black Pepper Porter, which they release around Thanksgiving every year. Then F-Word Farm takes that beer and makes a black pepper porter vinegar, and then Craic Sauce takes that vinegar after it has a chance to age and combines it with all the produce we put in it. The produce portion has more local partners with beautiful chocolate scorpion peppers grown specifically for us by Liberty Hill Farm and North of Boston providing the ginger and Japanese sweet potato that is fire roasted. After caramelization, simmering the ingredients in stout and Black Pepper Porter vinegar, this sauce brings a hearty, rich, and powerful flavor that many deem to be their favorite Craic Sauce. This sauce really still has the same signature flavor. Here's the slight difference. The recipe called for 72 oz of chocolate scorpion. We had 82 oz of gorgeous frozen Chocolate Scorpion peppers. In the moment when I was deciding how much to put in, I revisited the feedback form passionate Merrimack Black fans, and they said "SEND IT!" So sent it we did! It's about 10-15% hotter than last year, but still in the solid medium category of heat. My favorite pairings have been adding this to steak and rice, broccoli, mixing a bit with soy sauce or (dare I say ketchup). I tend to add this to protein dense meals, but there is so much room for exploring and sharing your experimentations. There are so many things to love about a new season including the beautiful fresh produce and for me it's all about delicious plump, soft, juicy figs. My go to lunch at the moment is a fig & watermelon salad with finely shaved prosciutto and Manchego. Super easy to make and so yummy. INGREDIENTS 6 figs, cut into wedges 600 gm watermelon, thinly sliced and cut into rough triangles 6 slices of finely shaved prosciutto Thinly sliced Manchego Basil leaves, to serve Honey dressing 2 tbsp extra-virgin olive oil 1 tbsp white wine vinegar 1 tsp honey METHOD 1. For honey dressing, shake ingredients in a sealed screw-top jar to combine and season to taste. 2. Arrange figs, watermelon and prosciutto on a platter. Top with basil and Manchego, season to taste, and drizzle with dressing to serve.

Easy & Delicious Dinner: Jiffy Chicken This was my mom's recipe that I have modified, but it's so easy and the whole family will love it. Although I use fresh herbs and spices, this recipe will take the guess work out of it: Busy day? Prepare the day before then bake it when you get home. 1. (5) lbs chicken- I like boneless, skinless thighs, but any pieces will work. 2. (1) Lb sliced mushrooms 3. (2) 28oz cans tomato sauce 4. (4) envelopes dry spaghetti sauce mix 5. (2) tsp kosher salt Season and brown the chicken. Place it in a baking pan In a bowl, mix sauce, spaghetti sauce mix, salt. Pour mix over chicken, stir in mushrooms Bake at 350 for an hour. Serve over pasta or rice. Double this recipe for even more delicious left overs.

Recipe: Ingredients: 1 can of tomato and onion mix (basil & herb) 1 can of whole tomatoes, including the juice 2 tablespoons of All Gold tomato sauce 1 cup of plain yogurt Salt and pepper to taste 1-2 teaspoons of sugar (to balance the acidity of the tomatoes) Instructions: In a blender, combine the tomato and onion mix, whole tomatoes with juice, tomato sauce, plain yoghurt, salt, pepper, and sugar. Blend the ingredients until smooth and creamy, adjusting the seasoning to taste. The soup can be served either hot or cold.
