🥑 New Publication on Advancing Food Science Through AI We are pleased to share our recent publication, "Shelf-Life Management and Ripening Assessment of ‘Hass’ Avocado Using Deep Learning Approaches." This collaborative work, led by myself with Pedro Xavier as the main researcher and supported by Prof. Pedro M. Rodrigues, introduces a novel application of AI in the field of food science. In our study, we developed a data-driven tool leveraging deep learning to accurately monitor the ripening process of ‘Hass’ avocados, aiming to minimize waste and enhance shelf-life prediction. Through the analysis of avocados under various storage conditions, our AI models demonstrated an ability to predict ripening stages with 88.8% accuracy and estimate shelf-life with remarkable precision. This publication marks our inaugural exploration into employing AI for food-related applications, opening avenues for further innovation in efficient food management practices.
