My best advice to anyone trying to improve restaurant profit. 👇🏼 Start to measure covers per work hour. It will change the way you look at everything. Start with the whole business first. And look for trends. Then look at front of house. Then look at day of week. Then look at part of day. Then look at positions. Then look at hourly. By the time you have finished this process. You will know where, when, and what is happening. And have a much clearer idea of how to improve. And if you aren’t sure how to execute, or want to really understand what I’m talking about. I got you. 👊🏻 Ps. This is hands down the best strategy I have ever used in a restaurant to lower labor cost and improve profit. I work with restaurant groups across North America every day in order to support their efforts to negate rising costs.
