1. The Difference Between Whiskey, Bourbon, Scotch and Rye In the United States and Ireland, whiskey is spelled “whiskey” and in Scotland, Canada, and Japan, it’s spelled “whisky.” Bourbon (Jim Beam), Tennessee whiskey (Jack Daniel’s), Irish whiskey (Jameson), rye (Knob Creek), and scotch (Johnnie Walkers). What makes them similar they are all whiskeys. -Tennessee whiskey can only be made and aged in Tennessee, the grain mixture is at least 51% corn aged in new charred oak barrels and filtered through a bed of sugar maple charcoal. -Irish whiskey can only be made in Northern Ireland and the Republic of Ireland. The four categories are blended, single malt, single grain and pot still. Aged for at least 3 years in a wooden cask. -Bourbon can only be made in the United States, the grain mixture is at least 51% corn, and aged in a new charred oak barrel. -Scotch can only be made 100% in Scotland, made from malted barley and aged in oak casks for no less than three years. -Rye mixture is at least 51% rye, aged in new charred oak barrels Flavor-wise, Scotch is smoky, bourbon is sweet, and rye is more astringent than the two others, making it particularly suitable to cocktails. Perhaps, this is the reason everyone believes that real bourbon is made just in Kentucky. Anna Axster and Wendelin von Schroder - cousins and veterans of the entertainment industry - have started a whiskey. Just a few weeks ago, that whiskey brand launched as Lodestar Whiskey, a blend of high-rye bourbon and American single malt whiskies aiming for a Southern California vibe. This whiskey - and the women behind it - are worth a look. It's a whiskey aimed at multiple audiences with multiple purposes. It can stand up on its own, to a cube, and in a cocktail (and not in that "this is a great cocktail whiskey" kind of way). It's outright pro-women-leaders with an allusion to feminism on the label, but the whiskey is still the star. I was a little skeptical at first - new people getting into the whiskey business with no background other than as consumers, a lower proof, and family connection? ICYMI: Episode 130 is live! I'm joined by Rich Stabile, owner, founder, and distiller at Long Island Spirits and Field & Sound out on the North Fork. Long Island Spirits is the island's first craft distillery and first distillery (legal, at least!) since Prohibition. Their new core lineup, Field & Sound, pays homage to the local fields and the Long Island Sound that give the whiskey (and rum and brandy!) their unique flavor. Just in time for Bottled-in-Bond month, they're all BIB, too (except the bourbon finished in rum or brandy casks - those are a mouthwatering 120º). Among all the highlights I could write, here's the one that stands out: the effort put into the pre-barrel spirit. Plenty of distilleries - most of them, honestly - will make an ok to good spirit, betting on the magic of the barrel to transform it into something drinkable. Rich and the team take a different approach, relying on the local grain and fields to provide the flavor, with #2 char Kelvin Cooperage barrels maturing but not masking that hard-earned taste.
