🥗 I love an interesting salad! 🥗 I am definitely of the age where I need to be very conscious of what goes into my body, so for the last 7 or 8 months, I have aimed to eat around 4-5 salads per week for my main meal of the day. [Mind you, I do have a penchant for chocolate covered peanuts, so I aim to keep these to a minimum, I try to convince my self that 'hey, these are mainly peanut', but I realise that this is self delusion]. My current streak is salad for the last 9-days running. I can't believe how quickly I get through the ingredients in the fridge though, I need my salads to be interesting as well as nutritious, with a variety of ingredients, I can't do just generic lettuce, celery and cucumber. I like to include pulses, grains, grapes, walnuts, purple radish, marinated tofu, cheese, olives, fresh beetroot and other legumes, preserved lemons, capers, seeds, blue-berries, nori seaweed sprinkles and anything else I can source, with a good quality dressing [not all in the same salad of course]. Not only does it do what I need it to do, it looks beautiful and tastes amazing [especially when slathered in humous]. Are you sensing the presence of a CV analogy? Lol reading the responses my CV would be to also to consider cultural and demographic influences so in Bradford it would have lots of spice!
