Already selling well in brick and mortar, my entrepreneurial son Adam just launched Poppin’ Cobs Single Harvest shelled popcorn on the big A. The leader in pops-off-the-cob whole ear microwave popcorn started shelling some of those cobs to produce the more traditional popcorn style. What’s different? First off, no blending with prior year crops. Second, very few unpopped kernels because the process from field to consumer is entirely different - picked as ears, individually inspected three times, the immature kernels which seldom pop are removed, and finally, the cobs are sent one by one through the sheller. His same proprietary variety of popcorn with its magnificent true popcorn flavor is also what Poppin Cobs is now offering in fresh, unblended, shelled corn. It is ready for your air popper, stovetop popper, or microwave. Think Single Harvest like single malt- the good stuff! Try it and also pop some of your old brand, then compare. Reviews are, of course, welcome. Other than whole ear microwave, the popcorn industry hasn’t done things any differently for a long time. That just changed! Sheep milk is a rich source of casein, a type of protein that makes up about 80% of the milk's protein content. Casein is essential for cheesemaking, as it helps to form the curds that give cheese its structure. There are different types of casein found in sheep milk, including alpha-s1 casein, alpha-s2 casein, beta-casein, and kappa-casein. The proportions of these different caseins can vary depending on the breed of sheep. These variations can affect the quality of cheese made from sheep milk. For example, sheep milk that is high in alpha-s1 casein is said to produce cheese with a better texture. #cheeselovers #cheese #dairyindustry #texturematter

The Hagberg Falling Number test, originally developed in Sweden, is used to measure the enzyme activity in flour. The FN of a flour is related to the amount and activity of cereal enzyme α-amylase, which is present in the wheat after harvesting. A significant portion of global corn production 🌽🌎 is used in the starch industry. Starch extracted from corn is processed into a variety of co-products, including modified starches, dextrins, and glucose syrups 🧪. 🔹 Dextrose Equivalent (DE) 📊🔬: DE is a measure used to indicate the amount of total reducing sugars in products derived from starch hydrolysis, expressed as a percentage of the total dry substance. Pure d-glucose from complete starch hydrolysis has a DE of 100 🌟. 🔹 Baking Applications Based on DE 🍰👩🍳: The properties of glucose syrups vary according to their DE value, which influences their specific applications in bakery products. Different DE levels correspond to different functionalities The main properties of glucose syrups, according to their DE, are reported in table below - adopted from Jackson and Howling (1999).🍞🥐.
