There's been a buzz about chemically ripened watermelons 👀 Here's the lowdown on how to spot them and avoid them: ️🟣 Inspect the Rind: Look for white, powdery residue - that could be carbide, a dangerous ripening agent. ❌ Red Flag Dye: Avoid watermelons with an overly vibrant red interior. It might be artificially colored with Erythrosine 🏀The Cotton Ball Test: Cut a piece 🍉and rub it with a cotton ball. If it turns red, it could be dye! 🔵Growth at a Cost: Four Chlorophenuron (banned in some countries)might make them bigger, but it compromises the natural sweetness. If you follow our posts you might already know this, but when making chocolate - #tempering is integral to a glossy finish and clean snap in your finished bar. The process of tempering or pre-crystallizing chocolate is about ensuring there are enough of the stable cocoa butter crystals we want, and less of the cocoa butter crystals we don't want in the finished product. When tempering, we are changing the molecular structure of the chocolate by way of a tempering curve. There are 7 beta crystals (also known as polymorphs) present in #chocolate. First, we heat the chocolate. When we do this all seven polymers are melted. Each beta crystal has their own different characteristics. Once all the beta crystals have melted, the chocolate gets cooled down and the beta 4 and 5 crystals become prominent. Then, we heat again to melt away the beta 4 crystals, and subsequently, make the beta 5 crystals more prominent. The Beta 5 crystals are responsible for the glossy shiny finish, stability, and #smooth texture that we love and want from a piece of chocolate. Voila!
